Mango Cake Recipe ( Odia ) : Here I have shown a very beautiful, flavourful , aromatic and super spongy baked Cake using this seasonal fruit " Mango " . Which is also called the King of fruits available especially in Summer season in India. This yummy Mango Veg cake is made without using All Purpose flour ( maida ), butte papper and Oven . Do enjoy this fluffy and flavourful Mango Cake at home :)
Ingredients :
1. Ripe Mango ( Pachila Amba ) - 1 ( 450gm approx. or 1½ cup )
2. Raw Semolina ( Sooji / Suji ) - 2 cups ( 250gm or 20 tbsp )
3. Sugar - 1 cup or 8 tbsp ( or adjust according to Mango Sweetness )
4. Oil - 1/2 cup or 8 tbsp
5. Boiled Milk ( room temperatured Milk ) - 6 tbsp ( or as required )
6. Baking Powder - 1/2 tbsp
7. Baking Soda / Cooking Soda - 1/4 tbsp ( instead of Baking powder and soda , take only ENO fruit salt 1 tbsp )
8. Tuttifrutti - 2 tbsp
9. Chopped Roasted Dry Fruit nuts - Almond+ Walnut + Pistachio ( take as per the availability )
