With the title of the short, I was assuming there'd be a comparison in performance.

That'll have to be a longer video. Just wanted to at least visually show the difference. But for the answer. Both Binchotan and quality Ogatan can make good Yakitori with the proper technique. But Binchotan just has performance quality that if side by side same chicken/same grill/same griller, it makes better flavor/texture/aroma Yakitori.

Which one can be used indoors with an edo period wood and copper hibachi?

Although they are smokeless on it's own, they are both very smoky once you start cooking on it so I wouldn't recommend using it indoors unless you have a commercial vent.

Thinner ones makes it easier to pack and load the grill which you do with Yakitori (no gaps). In regards to Binchotan vs Ogatan, quality Ogatan can perform pretty close to Binchotan but ultimately Binchotan just has better Infrared Heat, less prone to flareups, lasts longer so makes it much easier for the chef to focus on making quality Yakitori.

@@Yakitoriguyit’s also easier to put “ogatan” on a box of American style briquette tubes. Wouldn’t necessarily ruin the meal if it’s steak/meat rich.. but throw a carrot over heavily modified briquette and you’re in for a bad time
