Avial (Aviyal) is a semi gravy, healthy Kerala side dish. This dish have a variety of vegetables, cooked with Coconut and topped with Coconut Oil. Loaded with the goodness, this dish is an unavoidable part of Kerala Onam Sadhya. It is also perfect for serving with meals as well. The major attraction of Avial lies in the cut of the vegetables used. It should not be diced or chopped into small pieces, but it should be sliced lengthwise. There may be slight variations in the recipe depending on the region. Though its traditionally thick dish, the consistency varies at different parts of Kerala. Also the vegetables used can be altered. All these factors makes Aviyal a dear dish of not only Malayalis, but also for all health loving foodies.

INGREDIENTS :-
Cumin Seeds (ചെറിയ ജീരകം) -3/4 Teaspoon
Grated Coconut (തേങ്ങ ചിരണ്ടിയത്) - 11/2 Cup
Elephant Foot Yam (ചേന)
Raw Plantain (നേന്ത്രക്കായ്‌)
Yellow Cucumber (വെള്ളരിയ്ക്ക)
Potato
Snake Gourd (പടവലങ്ങ)
Carrot (കാരറ്റ്)
Long Beans (പച്ചപ്പയർ)
Guar Beans/Kothovara
Green Beans
Drumstick (മുരിങ്ങക്കായ്‌)
Green Chilli (പച്ചമുളക്) - 9 Nos
Curry Leaves (കറിവേപ്പില) - 4 Sprigs
Turmeric Powder (മഞ്ഞള്‍പൊടി) - 1 Teaspoon
Salt (ഉപ്പ്) - 3 Teaspoons
Coconut Oil (വെളിച്ചെണ്ണ) - 4 Tablespoons
Water (വെള്ളം) - 2 Cup (250 ml)
Curd (തൈര്) - 4 Tablespoons
