The dirty secret of black and white cookies: most of the time, they cover the entire thing in the white glaze, then just do the half of black glaze ON TOP of the white glaze.

Wait till you hear about Jaffa Cakes, they’re biscuits (cookies for US) in the uk with a base like this then an orange jelly centre and dark chocolate on top. Just thought it sounded like it would bring a similar flavour to what you’re on about lol.

@@mollusckscramp4124 as another utica native, i can confirm that everyone calls them half moons and that black and whites are shunned in the Mohawk Valley. There is great debate whether Hemstroughts or Holland Farms is better, but my opinion is that Holland Farms is the better half moon!

I also assumed these to be an American version of Neenish tarts, only to find when I looked them up that the territory they can be found in outside Aus and NZ is not the US but the Falkland islands. If any Falklanders can enlighten me as to how Neenish tarts ended up there I am very keen to learn :)

I never counted them as "cookies" but that might be because we call them "Amerikaner" in Germany. So i treated those as their own thing as did all the local bakeries i know of. We also generally only have one glaze on them. Just like "Berliner" (what you might call a Doughnut) i only get special variants of them on special occasions.

To specify, Berliner (which get called about a million different names, like krapfen, küchli, Kräppel or Pfannkuchen) are the jam filled doughnuts with no doughnut hole. In germany you find them filled with custard, various jams and sometimes some kind of alcoholic custard (in bremen the alcoholic ones are traditionally sold every year when the autumn fairground called freimarkt (literally free market) happens). They are usually topped with either a dusting of icing sugar or a simple glaze, although the fancier filling variations usually also get a fancier glaze to differenciate them. @@daveprice5911 The only real difference between the Berliner and the jelly donut is the jelly donut can obviously only have one kind of filling: jelly. American donuts are identical to German and Bavarian pastry. The reason this credit isn't always given is because the German settles of Pennsylvania were mislabeled as Dutch instead of Deutch.

You need to come to Utica NY and try Halfmoons from Holland Farm or Hemstroughts (the originator). Also, both Chef John and Rachel Ray have tried, but I feel like you're the one who can finally turn the world on to Chicken Riggies. If you're not familiar, I will personally pay for a Utica restaurant of your choice to ship a batch to you. immediately.

I recently made a variation of these for my Aunt! I found through research that the NYC black and whites are more cookie like and the harder frosting is supposed to "snap" when you break it. My aunt and I love the CNY version which is a half moon. It is a cake like base with buttercream instead of royal. These look great! Thank you for all you do! -chef shmichael

I’ve honestly wanted to see this be made irl: Yoshi’s Scoopa Koopa order from the Super Mario World cartoon episode “King Scoopa Koopa”. The order was 4 Coconut Shakes (they were basically just shaken up coconuts, but I’d LOVE to see a Babish version), 6 orders of Papaya Fries (to be show accurate, try to steal one out of the fryer (I’m joking, please don’t do that)) and 8 Egg Scoopa Koopas (basically Egg McMuffins, but with a Sunny-side up egg that was presumably over-easy as King Koopa said “no-one likes runny egg”)

I JUST made these about a week and a half ago. My husband cleared an entire batch practically single handedly. They were pretty delightful, I didn't make mine exactly like this so I'm definitely going to have to try this version. Although my recipe called for drained Applesauce and I felt like it really added a nice moistness.

Hey Babish, you can heat up the fondant to get it to set in 30 minutes or so (: I usually make alfajores and this really helps to speed up the glazing process

Heating up fondant can be tricky tho because if you heat it up too much it looses it's glossy effect and turns like kinda gray

Oh man these were SUPER popular in Germany when I was growing up, one of my favourites- here they have a fluffy dough with vanilla aroma in the dough itself, with the white glaze being citrusy! I'm also pretty sure they're usually fully covered with the white glaze and have the black glaze over half of it, but that might have been a regional style. *BIG* sense memory vibes from these

Your first cookie was missing only one thing - lemon zest. It's a small.addition that really elevates the depth of flavor on your basic sour cream cookie (& is also a fabulous addition to tea cakes if you're out of fresh nutmeg.)

I was super confused about referring to the icing as "fondant." Thankfully Google set me straight on the difference between rolled fondant and this "true" fondant/fondant icing. The more you know!

These are staple in German Bakeries and they are call "Amerikaner" (eng. American). I never thought they come from the US, I always though it was a German invention because of the US soldiers that were stationed in Germany after WW2 and nobody here had seen an Afro-American before (that's the story why they are black and white here). Maybe the soldiers brought the recipe with them and it stayed here.

Trader Joe’s has cookies that look exactly like these ones, they call their version ‘half-moon cookies’ because of their look of the icing which is similar to a half-moon.
