Candy takes a turn for the deadly this week as we recreate the viral honeycomb candy from Squid Game, whose complex shape must be extracted to avoid a bullet to the head. The stakes are decidedly lower in real life, but as it turns out, dalgona has a few tricks up its sleeve...or I'm just very bad at making it.

instead of the nonstick spray if you added a layer of powdered sugar or just sugar it doesn't stick to the metal as badly when your pressing it down. Great video btw!

I was wondering why he wasn't using something like a silicone mat in one of the later takes. I get him trying out the traditional way with the kit, but after so many attempts I'd have just tried the silpat.

Not going to lie, after seeing everyone and their mother making Dalgona candy on here flawlessly, it's kind of amazing seeing Babish mess up so many times. Glad it had a happy ending though.

I would love to see this as an edit lol. For the show though, they actually hired an old man that made Dalgona constantly. Apparently, it took a FUCKTON of dalgona because during certain shots it was breaking when it wasn’t supposed too. And each main actor had their own person from the art director’s department that was switching and checking out their dalgona. Everyone wanted to die after they finish filming the second game. There is an interview explaining it on Netflix’s channel with the writer/director/creator of the show and the art director.

I'll give you some nice trick. When you are adding baking soda, just use the chopstick that you'be been using to stir the Dalgona. When you are pressing the Dalgona, sprinkle some sugar on the metal plate then pour the dalgona over. Then do a sugar powder coat (no oil coating) on the surface of a pressing tool. Wait for at least 10-15 sec before you press the Dalgona. Trust me, these are nice trick from my grandma who used to sell Dalgona to kids back in Korea.

You don't need the dalgona set for this. Just use an old ladle, something with a flat base and grease paper. Use sugar instead of non-stick spray for better results. Also, no need to fan it to cool. If you are using a flat metal surface, the dalgona will cool off by itself.

When I was a kid there used to be a Dalgona making machine that activates when you put a dime in. You put coins in, and the machine gives you sugar and soda just enough to make a single portion. Then you melt the thing on the copper thing and pour it to pre-heated space that looks like dented cookie cutter. If you fail you wouldn't have been able to lift it from the cutter so you lose the money and get no candy. Basically the Millenial Koreans were trained since childhood to make perfect Dalgonas.

Dalgona coffee with actual dalgona is actually rather common in Korean cafés! Once you get better at making dalgona in the first place, just crush them into tiny chunks (slightly bigger then crude salt) and garnish the dalgona pieces on top of the dalgona cream you already have. Also yes, your pronunciation is great :)

FYI: A milkshake machine works well for making dalgona coffee. I worked at a coffee shop owned by a greek family and they had a drink they called a "Nescafe Frappe". Basically starts off the same as dalgona coffee with sugar, water, and instant coffee, but we shook it with ice and milk instead of pouring over milk for the layered look. We used a milkshake machine to make the whipped coffee.

I’ve found that using baking soda to dust your surfaces instead of a nonstick spray works a lot better (you can brush it off later to help the taste), also helps to pour the mixture onto parchment paper instead of the metal plate

I found a nice trick to make them stick less. Coat both the surface and the press lightly with powdered sugar. It really helped a lot

From what I've learned from watching behind the scenes of Squid Game, and down the rabbit hole of how to make this candy, it's truly an art form. On one Netflix video, they had the cast try to get the shape out, but the first quarter of the video was a guy making them, it was absolutely mesmerizing to watch, like a blown glass artist.

Honestly, I'm not even here to learn how to make things anymore. I just put his videos on whenever I'm having anxiety attacks and I calm down immediately. Fun Fact : the man who made the dalgonas for filming is the person who has been making it for more than a decade. He has been doing his thing at the same spot for years and every Seoul ppl knew where to find him even before the show. Really amazing to see what kind of buzz that the guy has created all over the world.

Great vid, I made it and it took me eight attempts in total. I few things that I did to make it work great was by pouring it on to a cutting board, smashing it with a spatula, and after pressing the shape I took a glass cup, turned it upside down and pressed it into the candy. That gave it the perfectly round shape. It looked more like the one that was in squid game then I expected.

I was under the impression Dalgona coffee wasn’t called that due to the similarity in flavor but because the foam on top looks like the candy after the baking powder is added/before it’s poured

This ep reminds me of the ube roll episode where babish remade that roll cake over and over. Once again his dedication to getting the recipe right no matter how many tries it takes is honestly inspirational lol. Definitely helped me after my fourth hot milk cake didn't rise properly, again, to be like ok. Here's what I'm going to try next time. Got it on try 5!

with the experience of failing dalgona all these years i had a reference that the concentration of baking soda reflects on the result of non-stickage but the consistancy is not easy to grasp. But I have to say I was surprised and happy to see you try this on your channel. the gadgets were spot on btw

Sorry for the late tips but you should be heating it over low heat, not medium heat. Also, give it about 15-20 seconds to cool after pouring it out before you stamp it. You can grease your stamper to help it come off a bit easier, but you shouldn't have to if you made them properly. Hope these tips helped.

Nope. A layer of sugar is what is traditionally used to prevent the dalgona from sticking to the table. A cookie tray with sugar would have been better.

The fact that you actually got that copper scoop is SO DOPE. I lived in Korea for my childhood back in 90s to early 2000 and I remember making dalgona everyday after school with friends. That copper scoop right there looks exactly the same as the one that we used back in the days LOL

Tip: pour it onto a tray lined with parchment paper and it dosent stick whatsoever and at all, you don’t even need any kind of utensil to peel it off with

A couple things: The guy who made the dalgona for “Squid Games” used powdered sugar on the metal flattened thing. Also: In “Netflix Korea’s” interview with some of the cast members from “Squid Game,” they had to play the dalgona game as they answered questions. To help them along, they were given a toothpick and a lighter.

I can't help wondering if the kit was more of a hindrance than a help. After having just watched Emmy's (aka emmymade's) video on making this with things from around her own kitchen (a ladle, disposable chopstick, greased baking paper, a flat bottomed bowl and cookie cutter shapes) it seemed much easier than the flattening method used here.

From what I have seen, when they make the candy, they have sugar on the metal sheet and put sugar on the press as well. Helps it lift and cools it down better. Since it's hot the sugar doesn't stay and melts.

Maybe 2 points for the Botched episode: 1. I've already seen it mentioned a few times here, but ppopgi masters in Korea dust their work surfaces with sugar rather than oil. 2. There's technically a difference between "dalgona" and "ppopgi". Although most people even in Korea don't really care about it, what Babish made is technically ppopgi rather than dalgona. The difference is that dalgona is made by melting blocks of solid glucose with baking soda and is usually served as is (rather than stamping down and pressing into shapes), while ppopgi is made by melting granulated sugar (not block glucose) with baking soda, and is usually pressed into the shapes we see in SG that need to be picked out ("ppopgi" literally means "plucking out" or "picking out").

In iterations I've seen of this candy, they generally use a larger surface to pour the melted candy which has more weight and prevents stickage, as well as grinding up granulated sugar with the presser tool on the pouring surface to further prevent sticking.

Pour it onto grease proof paper then u peel it off once its cooled, it comes off easy and its easier than scraping it off with the scraper to risk cracking it :)
