the idea of him making a mole hit me right when he started using dried up chiles because they’re somenthing quite unique of the mexican cuisine, but once he started roasting spices, nuts and used crackers, i literally said to myself, if that ain’t a mole you can’t no longer call yourself mexican. But i definitely agree, it’s one of the single most scarce things seeing other people but abuelitas and pro chefs make their own mole, so much so that even to us is quite an impact seeing the complex process, of such a beautiful and unique yet taken-for-granted sauce in our culture.

Pro Tip: Before you go out to the store for some of these not-so commonly used spices [depending on your usual cuisine] check the very back of your pantry/spice rack. Chances are, you still have some leftover from the last time you made one of Babish's dishes. Wish someone reminded me of this before I bought anise seed.. for the third time. You're welcome.

I read the book as a kid - it's best to keep them separate in your head. I love both, but they are very very different animals. For one: none of the characters have names. There is definitely not this crispy golden moment where you realize that the mayor has gone off the deep end of the fry vat. I am pretty sure the cause of the weather phenomena is never explained, but there is more variety to it: one of my favourites is the fog as thick as split pea soup (which is based on an English saying). That said, I love the movie as much as I love the book, and really felt like Flint was supposed to be someone like me - just, he actually made his wacky inventions, rather than just hoarding random junk for "science".

Fun fact about Mole: the legend of its origins is that, in Puebla, Mexico, a Bishop was going to visit a local convent, but the Sisters had little to no time to prepare for his arrival, so one of the nuns had the idea to make chicken, which was quick and always on hand, and just make a sauce out of odds and ends that they had in the convent kitchen. The Bishop loved it and now Mole is a staple food in Mexico, with many varieties popping up as more and more people experimented with what could go into the sauce. Try some Mole on white rice and chicken/turkey, you won't regret it. They even sell it prepackaged in some stores so all you really need to do is heat it up.

If you want the meatiness of the turkey to cut through the mole a little, you should make the mole a little sweeter. Thanks to the chocolate mole does tend to be a little sweet, but you can definitely make it sweeter and that lets the meat contrast with it. Just don't make it overly sweet, because that can happen and it's no fun to try to correct

Don't use pre-made chocolate, or if you do, use unsweetened Baker's chocolate. I use dark cocoa in a lot of savory dishes to get a deep, smoky flavor that's very rich and savory. It brings a lot of depth to a dish.

It's always incredible seeing what Andrew cooks even if they are like this where the original is nigh on impossible to eat. A couple of Australian food items that I would like to see him try to reproduce are an Australian Meat Pie (with either Tomato Sauce or Mushy Peas, Mashed Potato & Gravy on top), Lamingtons & Fairy Bread.

I think there's another option for the mayor's request. Do as you did before, but use a slice of cheese pizza instead of pepperoni. Deep fry it, but don't douse the entire thing in chocolate sauce. Put some warm chocolate sauce in a cup on the side, for dipping into.
