That Armenian cheese is called Chechil, and its amazing. If you have an Armenian grocery store near you they will most likely carry it. It has black caraway seeds and mahlab in it, and sounds amazing with the cardamom in this recipe

As a UK born and bred member of the human species, I have never personally seen real meatloaf. I'm reading lately that salting mushrooms sauteing them is better: Salt draws out moisture from mushrooms, so they steam instead of being sauteed. We're spozed to salt only after they are as brown and crisp as we want them to be. Gotta admit, I haven't tried this yet!
