The "shaking the pan" technique reminds me of what I do at work when I'm making stuff in our deep fryer. If it isn't evenly browned I just take the fryer basket out and shake it a few times.

Funny, my recipe for Chicken parm is a combination of Mythical kitchen's chicken parm, (Which is slightly different than this one) and I used the basic pizza sauce recipe made by babish on the chicago style pizza episode. To finish, I do something slightly sacrilegious, make a bed of garlic butter noodles and put the pam chicken on top. Kind of like serving it with tiny strings of garlic bread was my thought on that.

I always make extra fried chicken and put it away for the next day. Then add the cheese and sauce before broiling. It's a slightly less crispy version but still amazing the next day.

This has got to be one of the most fun episodes of Babish I've seen. Josh is such a fun, lovable, knowledgeable, knucklehead and it was both informative and entertaining to have him on this show (check out his podcast "a hotdog is a sandwich" to get more of this)

Man that intro was amazing, also I started watching both Babish and Mythical Kitchen earlier this year and the contrast between the sheer chaos and somewhat child-like bliss of Mythical Kitchen and the refined comedy and soothing voice over of Babish is great on its own. But today, today is a special day when both the chaotic Andrew and the chaotic Josh come together and I'm so happy it happened
