As a Canadian from Ontario and a Poutine connoisseur, I think this was slightly over complicated however very well executed! My instructions would be: make your crunchy favorite fries (not shoestring), thick beef or combination beef/chicken/peppercorn gravy (everyone has their favorite) and ABSOLUTELY use squeaky fresh cheese curds! Layering is a great thing to make sure your fries at the bottom don't end up with no cheese on the second half of your meal. This video was awesome!

Soak the fries in water for an hour. Then fry at two temps (325 and 375). That's how you get a fry with soft fluffy interior and crunchy exterior. Also, there's no excuse to ever peel a potato for fries. Overall great video; look forward to checking more out.

Les Québécois are here to tell you this looks like a mighty fine poutine! The only thing we'd do different in QC are the fries. We generally use RED potatoes actually and do a double-fry. We're looking for brown, kinda greasy potatoes that are only crisp on the outside edges and mealy soft inside. If you look at Québec poutines you'll notice that our fries are brown, not gold.

i LOVE this much more candid style of filming, it feels so genuine and reminds me of the old Bon Appetit style videos (RIP). Looking forward to more of this series

@@myname-mz3lo I'm not sure I believe you, as I used it last week and it worked quite well. I first heard about it from J. Kenji López-Alt of The Food Lab, and as I said, when testing it myself it worked. Of course, you could always be lying, a bad chef and/or did poorly while studying, I've got no way of knowing so I'm not sure why I'm defending myself here? Probably to make myself feel better and for the benefit of anyone else who scrolls through the comments I guess.
