"Alex French guy cooking" actually explored what the perftet amount of pastry layers, that would be ideal for a Croissant. he made a batch of 12 different ones. honestly quite interesting.

Yeah, I remember that, too! At some point, the layers became so dense that it had more of a cake-like texture or something? Not bad, but not a croissant, anymore. I forgot what the ideal number of folds was.

This was my first thought as well! Clearly a lot of people took something from that video :D @Nicolas Lanza Ferreira The principle of so many layers that at some point they are indistinguishable still applies. The only difference is that one contains yeast and sugar, the other doesn't. The yeast leads to the more chewy texture but doesn't really do anything for the layers.

I’m so happy that this anime got a second life. I watched this when I was a preteen. It taught me loads of food science + Japanese culture. Even though it may all be entry level little tidbit knowledge, this anime made me explore more of both Japanese culture and cooking, well into adulthood.

Oh man, I was rewatching Yakitate Japan and had a conversation about the show with a Japanese friend of mine. She said back in the day when the anime was airing on TV, they would sell the breads from the show in convenience stores for about a week until the next episode’s bread shows up. Got me real jealous bc as a kid, I really wanted to try some of the breads they were making in the show.

They don't actually have recipes despite being cooking series, it was meant to be parody of those other more "serious" cooking manga anyway so most of those breads aren't replicatable irl.

@@CrnaStrela Yakitate Japan! did actually have baking consultants for its production, and each episode had a segment showing their research. A lot of the ideas said people used are...deliberately bizarre or envelope pushing for flash and flare but the techniques and mechanics behind baking are legit.

It's so refreshing to see on camera talent giving credit to the people behind the scenes like what happens on this channel. I don't think I've seen it on any other cooking show/channel (at least to this extent), but it should be done more often elsewhere! This is one of the many reasons I love watching this channel!

would love to see more yakitate breads in here. loved the show growing up, still rewatch it from time to time to reminisce. And hey there's also the 648 layer croissant from a bit later in the series

I think I've done that at school. I forgot how many times we folded it. But as long as the dough can hold together, you can go as far as you want.

Really appreciate that Alvin both uses and shows that he is using the scraps. One of my biggest peeves is these food channels typically wasting so much food.

I learned a ton of cool techniques from this, thank you! Whipping the flour into the butter block and the indents when rolling out your dough are both brilliant, intuitive, and not something that I'd ever have thought of from the savory side of things.

I was actually quite surprised to see the butter whipped with flour. This way is normally used to fold the "French method" (it's basically the other way around. The butter is encapsuling the dough) but for this method (called German method) it's not necessary at all. What's most important is the consistency of butter and dough. (They should be of the same consistency). But oh well I should try one time.

Yakitate is the manga i used to read when kids and now i became baker because of it, i ask my ex pastry chef when i started working as baker that it is possible to make 300 layer of croissant, he said possible but is hard because if ur not careful the layer will be broken and hes not reccomended it so i never make it. But man you made it and makes me want to read the manga again and try your method. Thank you

When I first watched Yakitate!! Japan, I binged all of the episodes in a week. Not long after that, I got into baking and made my first Melon bread. I tried doing the rice cooker bread but that didn't turn out great 😆

I find it hilarious that, fifteen years after naming my account after him (due to all my normal choices being taken back when unique usernames were required), I can still instantly identify Takehito Koyasu's voice acting (showing up here at roughly 0:07).

This is the most bewutiful croissant I’ve ever seen. The layers are clearer crispier and more defined than any one I’ve ever seen from a normal bakery

Ooh, I’ve always wanted to see someone attempt this. There are a lot of weird breads in that series (the one that turns the announcer into Gamera always comes to mind), but the croissant with layers so thin they’re completely translucent has always seemed interesting to me, so I want to see what’s actually possible in the real world.

the reverse layer is what's the most interesting from that series, I doubt the translucent layers work, but the reversed layers sounds doable, so we need flavor comparison of the 2 technique
