BUUT I believe Andrew gets the creativity price for whatever that’s worth. Turning a croque madame into a handy sandwich is actually really cool and I would love to try it. A thick slab of bacon + egg in a donut obviously is great, who would have thunk, but doesn’t quite win the Nobel Prize for me.

Separate a dozen egg yolks from the dozen egg whites. Mix half a cup of heavy cream into the egg yolks. Whip the egg whites into a meringue. Add salt to the yolk mixture. Fold the egg whites into the yolk mixture. Pour mixture into a greased casserole dish and bake in the oven for 250F for 10 minutes. Voila.

There’s a sandwich in fort Myers Florida from Wally’s deli. It’s call the Sunday funday. Fried chicken, hash brown, eggs (your way), and hot honey. All on an amazing Kaiser roll. Best breakfast sandwich I’ve had in my life. 10/10 recommend.

@@darcyemullen i don't think anyone explicitly said it was ai but the image definitely has the ai "look" about it. upon closer inspection there are elements drawn into the croque madam that a human artist wouldn't have done because they make no sense-like the way the cheese is melting unnaturally with multiple jagged edges rather than just the corners, the parsley randomly floating behind the sandwich, and most obviously, the white cheese melting into a puddle of yellow egg yolk onto the board. yeah... definitely ai-generated slop 😞

Best breakfast sandwich I ever had was the one I used to make on Sunday mornings when I was in college. I lived off campus in an apartment complex across the street from a Whole Foods and got friendly with the butcher counter folks. 8 AM, when the place opened, I'd get a quarter pound of breakfast sausage fresh. That plus an egg, a slice of real deli American, all on an English muffin fried in the sausage grease...as Steve1989 likes to say, "we're startin' the day off right."

This is soul crushing. I hate the taste of eggs. I have tried them in so many ways over the years because I want to like them , or at least be able to tolerate them in some form. I cannot. But breakfast sandwiches are the sirens call. After watching this I want to try one but I know it will end in regret and possibly heaving. All of these looked wonderful.

I'm glad I despise eggs. When I make brioche all my ingredients are ice cold. Because it takes so long to fully incorporate the butter that the dough gets too hot before you're done kneading it, I use a machine. I also use a malt powder. The malt powder helps the yeast work better with enriched doughs. When making an enriched dough I use SAF Gold instant yeast. The malt powder also helps with brownning, so you don't have to go crazy with an egg wash. If you just want help with browning Ovaltine works too.

I make Brioche French Bread French Toast sandwich with eggs and bacon in it. You can put cheese on if you want. But I do this… Make French Toast with Brioche French Bread Make bacon with some maple syrup Make eggs (however you want) And then assemble the sandwich. If you want you can have cheese. If I have sausage available I’ll also make the maple syrup sausage and include that in the sandwich with the bacon.

If you heat the milk before you add to your roux it will thicken immediately and you can add all at the same time. It will save time. It is also how Escuffier wrote the recipe for Bechemel.

There's a difference between smoking cumin and burnt cumin, fyi. Cumin often smokes as it toasts, not horribly, but distinctly. I assume it's the cumin powder burning, leaving the actual seeds unburnt. It tastes great.

My intake of "breakfast sandwiches" has been sadly limited. My favorite is the sausage croissanwich with egg and cheese from BK. But really, an everything bagel with cream cheese and a pickle, followed by cinnamon raisin toast with butter and cream cheese are my usual. Or some nice fluffy scrambled eggs with toast, if I feel like cooking. biscuits and sausage gravy for celebratory breakfasts, or bread pudding.

So a so-cal chef here.....the harrisa was very similar to a salsa roja.... Maybe dive in with that, and manchengo instead of gruyere, I would've used those amazing orange yolks to really step it out visually, and steam those whisked up (why are you putting so much emphasis on the "h")

I understand what you were going for when you steamed the egg in trying to beat the winson egg but they didn't steam it, what they did do was make HK style scrambled egg or "huadan" or "whampoa style scramble" if you search youtube for Lucas Sin Shares 5 Ways to Make HK-Style Egg Sandwiches he shares the technique of how to do it and the key is the cornstarch slurry.
