Solvent property of water: As solvent water behaves differently with different compounds. Polar compounds: Due to the polarity of water it is an excellent solvent for polar substances. Ionic substances: Ionic substances when dissolved in water dissociate into positive and negative ions. Non-ionic substances: Non-ionic substances having charged groups are dispersed in water. Non polar organic compounds: Non polar organic compounds are insoluble in water. E.g: Such as fats. Functions: Non polar organic compounds help to maintain the membranes which make compartments in the cell. Solvent for biochemical reactions: In solution ions and molecules move randomly and are in a more favorable state to react with other molecules and ions. It is because of this property of water almost all reactions in cells occur in aqueous media.
