13:09 Aspic is absolutely nasty, but the history behind it makes it make sense. During WW2 there was an industrial boom in the food industry as military rations required shelf-stability and increased manufacturing capabilities allowed for more kitchen gadgets like specialty pans and cake molds to go to market. After the war ended, companies needed to keep profits up, so they began pumping out all those weird ads for 7up in milk, ham & bananas hollandaise, prawn stuffed apples, and aspic to housewives. People didn’t usually eat what you see in those ads, aspic wasn't actually popular in the US, it was just result of companies trying to sell a product they didn’t even know how to use yet. The mid-century American diet had a heavy focus on meat and potatoes. Lots of casseroles, pasta dinners, and pb&js. We’d find it bland but totally edible.

@@smokeyskeet1694 Thank you! I'm a culinary student and happen to find the history around food really interesting. Global conflicts always end up smashing together food cultures or forcing new ones out of necessity, WWII more than almost any other. The US imported cuisines from France, Italy, and China. Some countries like Japan took from our food culture and made it their own (yoshoku). Food science advancements gave us the PB&J, m&ms, corndogs, and energy bars and instant coffee. Just a few short years radically changed what and how most of the planet ate.
