Narrator: We've all been there. The loaf of bread you bought a couple weeks ago is starting to grow mold and you're wondering "Maybe I can just cut the part where I can see the mold and eat the clean part." It turns out, even though you cannot see it, your whole loaf of bread could be teaming with fungus. Following is a transcript of the video.
You're all ready to make the sandwich of your dreams. Turkey, tomato, and swiss on a bed of romaine lettuce sandwiched between two slices of sourdough. Classic.
Oh no, what's this? Mold? But look, good new. The mold's only on part of the bread. So, I can just cut that away and be fine, right?
There's no such thing as a "clean" part of moldy bread. That's because mold is a fungus, like mushrooms. The caps on the surface are easy enough to spot. But there's a vast network of subterranean "roots" called hyphae that you can't see.
So let's take another look at that bread of yours. Ugh, disgusting!
Maybe you can just grab another piece from the same loaf. Well, that's not such a great idea, either. Because by the time mold sprouts its fuzzy head, what you're really seeing is the reproductive part of the mold called sporangiums. Each sporangium releases tens of thousands of spores.
So, even though you can't see it, that entire loaf could be teeming with fungus.
But it seems like such a waste to just throw it out. After all, you eat mold on purpose all the time, like the mold that goes into making cheese, soy sauce, and even life-saving antibiotics, like penicillin. Eating a little bit on your bread can't be that bad, right?
Ultimately, it's a gamble. Just like eating a wild mushroom, many are fine. But some can be deadly.
Mold is the same way. There are thousands of different species of mold - many of which are harmless to humans. But since so many types can sprout up on food it's nearly impossible to know if what you're eating is safe.
Cladosporium, for example, can sometimes trigger allergies but is generally harmless. Whereas other molds, like Penicillium crustosum, produce harmful poisons called mycotoxins. An elderly couple in 2005, for example, was admitted to the hospital after eating a can of soup contaminated with this kind of mold. They had severe muscle tremors but eventually recovered.
But other molds, like Rhizopus stolonifer, can have permanent effects. And you might recognize this mold since it commonly grows on bread: blue-green, with black splotches, and super fuzzy. In rare cases, it can prompt a deadly infection called Zygomycosis, which causes your blood to clot and can, ultimately, starve your cells of oxygen to the point that they die.
And it's not like bacteria where a little heat will eliminate the threat because high temperatures won't break down the mycotoxins. And since you have no clue which one you're about to put in your mouth, ask yourself: Is it really worth the risk?

My high school science teacher once told us about a time where they were getting students to cultivate mold on a slice of bread. They told a student that the mold on their bread was not dangerous and they ate it. My teacher was right, they were fine, but I couldn’t see myself eating bread mold even knowing it was safe (yeast doesn’t count).

Late to the party, but this is why my family started freezing our bread as soon as we get it home. It helps preserve your bread for longer periods of time (possibly forever but don't quote me on that) and every time we want a slice, just grab one out of the freezer and defrost/toast it in the toaster. We've yet to have a bread go moldy on us ever since. Of course that doesn't ENTIRELY remove the risk, but it makes it a LOT more manageable.

I ate moldy croissant without realizing it so many times before. The first time i ate it half way through when I realized the blue moldy part was right there. I thought it tasted weird… I’ve also tasted many moldy berries. They all have the same taste, like a bitter and unfamiliar taste you’ll realize immediately but won’t question it until you see the mold. It doesn’t taste like moldy milk and the smell also smells the same as it tastes

My old friend told me that one time he went home drunk, sat down at the table in the dark, and proceeded to eat a bunch of hot dog buns. His mom came into the kitchen before he was finished and pointed out that they were completely moldy. After that........he finished the rest.

I work at one... No preservatives. Which is good, I suppose, but it's like buying fresh bread at a local bakery that's already 1-3 days old depending on when you bought the loaf and how long it sat on the shelf. You should really just go to your local bakery and buy it fresh, it'll last longer.

Just leave the bread you haven't opened yet somewhere, and put the bag of bread you did open in the fridge. Also when you are closing the bag up, try to get as much air out as possible. Since we've been doing that, we haven't had mold!

There was a time when I made myself a sandwich, ate it and learned that it was really, really tasty. So I went to make another one... and then I saw... tiny green spots on part of the bread I just ate a slice of. Of course I threw the bread away but I still wonder - could a type of bread mold that is both tasty and safe to eat exist? I didn't have any bad after effects I could recognize. But it was just one small sandwich. I'm not sure what would happen if I ate more of it.

Tasty molds that are safe to eat are usually put on cheeses, my favourite beeing truffle and the blue stuff ;) These are lab tested though, so unless they start growing a different type of mold you should be fine

Bread is made using a fungus and no food is really fungus-free. Spores are all around you, including in clean packaging facilities, bakeries and your hands. The point is that you can see it: Mold usually refers to the visible fluff or fungal spots. This means there's a huge amount of fungus growing already. When discussing health risks, dosage matters :)

You can’t. You just shouldn’t eat something you know to be contaminated. Spores are on everything and other commenter mentioned. No problem. It’s when they start to break down your food it becomes a problem. Fungi are “inside our stomachs”. You’re essentially eating something already partially digested, like how flies vomit up acid on your food to digest it before actually eating it. You would not want to eat that.

What i do when i find moldy bread is toss it outside for the wild animals. If they can eat it they will if not they won't and there's always something that can. When you do this it's gotten rid of, but not wasted.

We started making our own bread a few years ago, I haven’t seen a piece of moldy bread since, it either gets eaten or dries out. I’m pretty sure a lot of store bought bread is contaminated when we buy it.

I’ll always remember what my High School Biology teacher told our class when she was taking about mold. She gave the example of a loaf of bread. If she ever saw mold on one slice and only one, more than likely the other sliced started to develop mold that was yet to be visible and threw the whole thing away. Not worth the risk.

My teacher said the same thing but with tomato paste. Mold on top is visible because it is the part that is in contact with oxygen but in reality the whole can is contaminated. I have mentioned this to my Mother and she told she have cleaned the top of the moldy paste and used it several times.

That explains why I've had bread that I could SWEAR tasted moldy even though I couldn't see any. Nothing worse than making a sandwich on some bread that looks fine, and then you take a bite and get that awful taste. That's an appetite killer if there ever was one.

I always look very closely at each piece of bread when it's not fresh. The mold can be seen as a mesh of very thin "hair" on the surface and in the pores. Whenever I spot it, the bread also doesn't smell good.

Perhaps, but as a general rule of nature, if it tastes bad it's good for you. If it tastes good, it's bad for you. Applies to both food (vegetables) and medicine. Now if we could just find a way for the molds to evolve so that they are psychedelic instead of harmful. Should be possible since they are Fungus.

No our tastebuds evolved in a way that the foods we needed would taste good to us. At least, the foods found in NATURE. Evolution didn't account for things like Mountain Dew and Baconators. Like the video says: not all fungus are alike. Some are beneficial, some will kill you. True of plants and animals, too, that's why there's some we eat and some we don't.

So funny story. Back when I was a small person. If my grandma would find moldy bread in the cupboard she would cut out the moldy bits from the bread, with a knife and proceed to eat the same inedible parts she cut out because they were not good for consumption. She also drinks unpasturized milk, whick is also said to be dangerous. I guess the grimm reaper was afraid she would start gnawing his bones , so he never came to get her. She's about 70ish and still kicking.

yes, you know if you go outside you're at risk of being hit by run away car wheel .. or dog falling from the roof top or that debris of a plane that exploded in the air .. or accidental ricocheted bullet .. Hell you can die at home too .. like slipping and falling in the shower .... this video is true, though they don't specify how much of that toxin can be generated in a slice of bread and how much you need to get symptoms, it could be that you need to eat 200kg of moldy bread in span of hour to get poisoned

The level of risk is determined by the amount of mold present. The thing is that you could actually eat a moldy bread a still be fine. But ultimately, there is a small risk of eating a bread that has no visible mold on it and getting sick. What this video is telling you is that by the time you see the mold, it has already began to multiply, at which point it is better to assume that all contents of the container are contaminated. In short, the logic of the video is perfectly sound.

+MTB Rider of Justice One other thing of course to bear in mind also is that bacterial spores are also pretty much ubiquitous in the environment, if there has been enough time from non sterile exposure to have visible colonies of mold there are almost certainly thriving bacterial colonies present also. Again most of those are also harmless to healthy humans with an effective immune system especially when consumed orally (many are killed by strong acid) but you only need to get unlucky with one of them to live to regret it.

The worry is about the byproduct, called mycotoxin, that is produced when fungi reproduce. Moulds like aspergillus are inescapable they're all around us and we breath them in etc, but avoiding them when we can reduces the chances of things like liver disease.

This is one of the reasons I do not miss my parents now that they are dead. Growing up I was forced to eat all this because they claimed that it was money they could not afford to waste. Yet, despite being an adult for over 15 years now I have never once went broke living by the saying, "If in doubt throw it out." Also, my health as an adult is significantly better than it was as a child. I am so glad to be living in a time where our collective knowledge about harmful practices is continuing to grow.

Course you have, a lot of that stuff will be airborne and you have breathed it in your entire life. You are more likely to get sick from someone sneezing or coughing in your vicinity than eating a tiny bit of mold.

When I was a kid I made a sandwich that had mold on it. Didn't notice until I took a bite and noticed my food tasted like dirt. Did some inspection and saw tiny bits of mold. I wasn't expecting mold because the bread wasn't even a week old.

Best thing to do is have sliced bread in the freezer and use a toaster to heat it up, it may take longer in the toaster but at least you know its less likely to have mold in it

Fabrizio It's not specifically about the bread. You avoid consuming anything you're not sure about. It's not to say I know for a fact it will make me sick or kill me. It's to say I don't know for sure that it won't. Most people who take the risk, not including people who would starve if they don't, are of the same subcultures who have a high mortality rate from actions that serve no purpose and bring the quality of all aspects of civilization to sub primate levels. I don't trust their advice of "trust me, it's okay."
