moopsio I think gluten free flour works. but if your GF flour is self rising one(included baking soda or powder already), don't add any baking powder. I mainly purchase my kitchen tools in japan and the united states. I like "Crate & Barrel", "William Sonoma" and Amazon.com lol

I made my own cantuccini two years ago. Were very delicious, though a little bit too hard. :) I added cranberries and chocolate chips. Good!

Making them just right now ...In the classic almond version (like the Cantucci as I wrote on your post) with coconut flour instead of almond flour, just because I run out of it :) It was the occasion for a sort of "house warming" for my brand new big wooden cutting board! So happy to have bought it :D

Is that all purpose flour can be subtitute? No adding any flour to make it like pastry flour? It is hard to find pastry flour in malaysia
Good idea using flax seeds. I rather use honey, molasses or stevia instead of cane sugar. Not so sure about using baking soda because it's not a natural thing, it's man-made; also another problem is the common commercial baking soda has aluminum as anti-caking agent, so try get the aluminum-free baking soda if using it.

just make it without flaxseed or substitute with chia seed. When you don't add flax or chia, I think you'll need to reduce the amount of soy milk a little bit like 10 - 20g.

ghaida h flax and chia seeds cause bitter taste when you add too much. It's just 20g of flaxseeds in this recipe so I didn't feel any bitterness:)

my 1st with biscotti was a total mess :'D too dry, this one looks nice. oh, and for +moopsio: I just come up with the same thought as you are, what about gluten fee flour?? I'll definitely try this evening. We have a "kue bangkit" or "cheese sagoo" cookie in Indonesia that's using tapioca starch, you need to fry dry the starch prior using, we usually add pandan leave, let cool and use it. The result is a very smooth-melt in your mouth- kind of cookies. You should try it, won't fail but still using eggs :p (sorry, GF but not vegan)

it wont rise, if you do that. baking soda spreads, baking powder rise. so if you use baking soda ull end up a flat biscotti

Just one without the music, but the same length and video. For example, just like the soba noodle one. I do like the music but for some reason I really like the ones where I can hear all the sounds of cooking.

Yes. vegan version biscotti needed to bake more than normal biscotti. I think that is because there is No egg in it. I baked 60 - 70 minutes in total.

nice, but why biscotti? biscotti is the general name for biscuits in italian. This kind of biscuit is called cantuccino. :) awesome videos by the way.

caprona92 ciao, i cantuccini (anche cantucci o biscotti di Prato) sono un tradizionale biscotto di mandorle della provincia italiana di Prato vicino a Firenze. Sono cotti due volte come fette biscottate, prima come pani lunghi e poi tagliati, il che li rende croccanti e resistenti. I cantuccini ti contengono. a. Mandorle, farina, zucchero, amaretto e varie spezie come cardamomo, cannella, chiodi di garofano e anice stellato. I cantuccini vengono spesso mangiati al Vin Santo, dove sono immersi. La somiglianza nella ricetta con l'originale anche se non ci sono ancora cantuccini! Sono biscotti vegani!
