I'm from UK. Retired. I was a butcher for many years, after leaving school. As I watch what you're doing and listen, it's like being transported back to that time. Your description of meat sections differs somewhat, but watching the cutting is strangely compelling. Like I want to dig out the knives and apron again and get a job, lol. I note you wear chain mail. I never did; not sure why when I think of the accidents from not doing. Anyway, thanks for your great videos.

Too much wastage. I wonder what happens to those fatty and meaty edges he cuts off. Meat is not supposed to have so much carving to get a pristine look unless it's meant for fast grilling or frying where the fat does not render fast enough
