This dish is normally fried with eggs, not Salted egg yolks. Of course salted eggs have been used in some other Chinese recipes like our Cantonese Sam Wong Tan but using salted egg yolks for everything became trendy only in recent years. Hope u dont mind my feedback on what I know about this recipe. Anyway, thank you for sharing. 6:05
