The best antidote to tea drunkenness is candied ginger 糖薑; and it's so easy to make at home! Once after five gongfu sessions in a row on an empty stomach (I was just getting into gongfucha a couple decades ago) I got so tea drunk I seriously thought I might die, and had to spend the rest of the day in bed. Later I went to my tea master and asked what was wrong; she told me to try candied ginger to fix it. The next time I got tea drunk (I think it was the very next day), the ginger brought me right back from the brink. The ginger's intense yang energy balances out the yin of the tea!

Interesting... we might have to have some of that on hand to try. Fortunately we don't often approach the point of tea-drunkeness, but maybe this experiment is a reason to try. Plus, I love candied ginger, so it's win-win.

Large-leaf roasted oolongs have less caffeine and are perfect for those who are caffeine-sensitive craving an evening brew.

It's not that fun at all! I think there's a pretty nice feeling that comes before that point and perhaps some people identify that as "tea drunk", but I've always felt it's the stage after when you've overdone it.

Where did you get the info about discarding first steeps affecting caffeine content? Most of the reasearch I've seen shows that caffeine extraction from tea is pretty much linear in time for the first few minutes of brewing (for example see "Effect of Infusion Time and Temperature on Decaffeination of Tea Using Liquid-Liquid Extraction Technique") - which means discarding the first 60 seconds worth of brews and then drinking the next few will still give you roughly the same ammount of caffeine. You would need to discard the first 3+ minutes of brewing to see a noticeable decline in caffeine content, and at that point you're discarding some of the best brews unfortunately :(

Ah yes, this is true. Unfortunately I think this was something we relayed without enough critical thought, and something I take back. I suppose if someone discarded the first brew and stuck with shorter times, then there would be less caffeine, but as you pointed out also less flavour as well. It seems like there's no way to effectively minimize caffeine without sacrificing the flavour and quality of the tea. Our mistake!

at time 2:24 when you talk about boiling white tea leaves what hot-pad and teapot are you using? I love the combination and would like to get one myself.

It really depends on your constitution. I drink raw Pu'er in the morning on an empty stomach. But that is because I run hot in a Chinese medicinal way and that tea soothes the stomach. I tend to drink Japanese green teas in the early afternoon, as a way to accompany my day. I couldn't do it the other way around. Green tea on an empty stomach is asking for trouble for my specific constitution. I think drinking tea is also a question of understanding your constitution and what better fits it, not just the mental aspects. I'm also lucky to have one of the top Pu'er tea master guiding me :)

That's a very good point. Everybody's physiology is different you need to understand and listen to that first! Not everyone can drink certain teas on an empty stomach, let alone take on multiple different young sheng teas in the same afternoon. And there's no need to force it!

Top stuff is great, but there's no need to drink it all of the time. I think a good balance can be found in the $0.30-0.60/gram range, but even on a tighter budget it's possible to find some really good value teas.

Discarding the best three infusions in order to reduce caffeine intake is probably the worst tea advice I have ever encountered.

I don't know if I'd consider the 1st infusion (or 2nd, depending on how tight the cake still is) the best, but you're right, and I take back that recommendation since there's no evidence that caffeine is extracted in higher amounts during earlier steeps. Definitely relied on one of those "facts" that gets repeated, but should have researched better myself.

😂🤦‍♂️ I've always felt like I've done a decent job of adapting and embracing local tastes as a foreigner in Asia, but durian is the one thing that I can just never get into! I actually kind of like the smell of very fresh ones, or some cakes or candies, and then think maybe I can like it - but no, it never works out between us. Clearly I have work to do.

@@BitterleafTeas I grew up in Malaysia where everyone loves it so it's always been a favourite, and I hear it's an acquired taste for people who haven't. But when they do get a knack for it, they fall in deep... :D Really expensive these days though as the Chinese have massively driven up demand.

You'd be surprised how boring videos are without a little bit of a background music. Plus, we try to keep the volume low enough that they don't interfere. But if you can only handle one at a time, we have lots of other videos that are just music, no blabbering!
