As a teenager, I worked at Chez Helene and Chef Austin Leslie was my boss and the owner of the restaurant at that time. I loved going on lunch break because we could order whatever we wanted on it was always on the house. I always had the Seafood Platter with Bread Pudding for dessert. For breakfast, I'd order Liver, Onion, and grits with their famous Biscuits. The Chef "Moon" always kept the kitchen moving and the atmosphere joyful. It was also amazing how many celebrities visited Chez Helene's.

yes thanks to who post this. I'm sure some folks aren't alive after time and years has gone by. Some left a mark on cooking. Yes indeed..I am from Baton Rouge and I know how the folks cook in the south. I live in Alaska and I brought my cooking with me. Like they say... You can take me out the south.. So good. I wonder if Chef Bailey was owned Bailey's in the Roosevelt Hotel in the 1980's.
