Just made this today! It's absolutely amazing. This is a much better option than colouring regular buttercream with black which is too sweet for me. This has the richness and bittersweet taste of dark chocolate yet it's so creamy n not too sweet. Just perfect. Love it.

I absolutely LOVE your videos! If I need to know how to do something, I come to your channel. I was wanting to know how to make black chocolate ganache. I watched another you tube channel and the video was just okay. I came here an watched yours and it is so clear and perfectly explained, as are all your videos. I have one question. Can a little corn syrup be added to make the ganache shiny when the cake is covered with it or is it already shiny when it is hardened on the cake? Thank you.

My experience is that colors deepen after they sit a few hours so I stop adding color when it's close to what I want..... I know I've got enough color when adding more icing , etc back into bowl and current color doesn't lighten. Hours later or next day it's now oxidized so true saturation is achieved. It's a very reliable way to assure myself little ones won't be passing blue for days after their party! Hee hee hee

Thank you. i notice that the amount of chocolate to cream ration is different than what most others say. if i am not mistaken, i am used to seeing a one to one ration for chocolate to cream. Yet here you use double chocolate to cream. It looks gorgeous, i am curious though what the different ratios mean. Thanks again for a gorgeous channel!

The ratios are totally dependent on what you are using the ganache for. This particular ganache is being used to cover and stack a cake so it needs to set firm. In that case I always use a 2:1 ratio. If you are making a drizzle sauce you can use less chocolate and go for a 1:1. A 1:1 is far too soft to layer and decorate a tall cake with. It would slide all over the place! 2:1 is also used when it's going under fondant. I hope that helps :-)

Thank you! Actually I didn't really notice any difference to the chocolaty taste of the ganache. I used it in a video today where I covered a cake and needless to say I kept taste testing it...lol....it wasn't too bad at all :-)

I used Wilton. Starting with the dark chocolate base means you don't need much colour at all to get to black :-)

You can refrigerate for a week or freeze for a couple of months. Bring back to room temp then heat in 10 seconds bursts in the microwave stirring each time till it reaches a spreadable consistency.

You may need to place the tray lower in the oven so it is closer to the hot base of the oven. Try increasing the baking time by one minute at a time. Open the oven and push lightly on the side of the Macaron. If it gives, even slightly, then leave for one more minute and test again. Every oven is different and the hardest part is finding the timing that suits your oven. Once you have that down pat, you are on your way!

How does the chocolate not seize? I thought you can't just add gel food coloring directing to chocolate without some sort of oil ?

The gel colour has been added to the chocolate after the cream was added. The cream acts as a buffer so the chocolate doesn't seize. If it was added directly to the melted chocolate before the cream was added it would seize :-)

The problem is the more color I add, the higher the chances of staining someone's mouth black. Which is not ideal especially during a party.

Joanne Chew I made a rainbow drip cake on top of black icing. The drips ran quite a bit so my guests couldn't quite see how much black there was. It was a big laugh when everyone started talking after eating and realising we all had black mouths! On a side note though, the biggest surprise was the next morning when everyone went to the toilet 😂
