Black Pepper Ice Cream Recipe - 催泪瓦斯味冰淇淋 / 催淚彈味雪糕 / 胡椒噴霧味雪糕 - Ok - hear us out. This may be an odd ice cream flavour, an unexpected ice cream recipe; but it has historical precedent, and it's very popular amongst pro-democracy demonstrators in Hong Kong. It's known as black pepper ice cream, tear gas ice cream, pepper spray ice cream... The flavour is very good, as is fighting for your democratic rights and the greater good of humanity.
Ingredients:
500 mL (2 cups) 35% whipping cream
250 mL (1 cup) 3.25% milk
30 mL (2 Tbsp) dry milk powder
45 mL (3 Tbsp) cracked black pepper
30 mL (2 Tbsp) Invert sugar (like corn syrup)
125 mL (1/2 cup) sugar
5 egg yolks
10 mL (2 tsp) pure vanilla extract - Optional
Method:
In a medium saucepan whisk together the cream, milk, dry milk powder, corn syrup and pepper.
Bring it just to a simmer, stir, and then remove from the heat.
In a medium bowl, whisk together the yolks and the sugar.
Whisking constantly, temper the egg yolks with some of the hot cream.
Whisking pour the egg mixture back into the saucepan and cook over medium heat until the mixture reaches 170ºF.
Pour custard through a sieve into a bowl, and whisk in the vanilla (if using).
Cool quickly with a bain marie or ice bath.
Cover and refrigerate until cold.

@@artbyshan i watched another YT channel make icecream a few days ago and he said you can make it with any milk you prefer. So i would not be afraid to try it or look up a way to do it with a plant based milk. Or laktose free milk.

You may want to try coconut milk or cream for heavy cream part... higher fat content might give better texture?

As a hongkonger, I am surprised to seeing the Chinese title. I read some comments of people discussed about the meaning of Chinese and other Hongkonger suggested use Traditional Chinese . I used your recipe to make vanilla ice cream and the corn syrup and powder milk trick worked great. It is definitely the creamiest ice cream I've ever made at home. Thanks for the tip!

This reminds me of jerk ice cream. I first tried this at a Jamaican festival I attended and fell in love with it. If you haven't tried it I reccomend it.

Yum! Thanks for the advice re: adding powdered milk to the mix. l plan on making a batch of icecream with Australian native pepper berries. These berries are native to Tasmania and are absolutely delicious.

Black-pepper ice cream sounds delicious! I love the fragrance of freshly cracked black pepper. This would be nice served in tiny little scoops as a "palate cleanser" between courses, and I'd like to try it with a little maple syrup over it.

I make strawberry mint black pepper jam and it’s great...balances the sweetness of the strawberries and sugar really nicely, but not noticeable enough that people really know it’s black pepper. They know something different is there, but hard to place exactly what.

Back in the '90's, I found a recipe for Black Pepper and Balsamic Vinegar Ice Cream that's served with fresh strawberries. It's one of those recipes where you look at the ingredients and think, "Eeeww," but final result is something that magically transcends the sum of its parts. It's a unique tasting experience. One I will never forget.

I actually had some black pepper ice cream a few years back at a homemade ice cream social, and it was so delicious. It also had some orange zest in it, which only added to the amazing flavor.

In Cleveland, OH we have an annual Garlic Festival, and Mason's Ice Cream makes garlic ice cream with peppercorns! It's a must-have for me every year.

I'm a sucker for unconventional ice cream flavors. One of the best things I've ever eaten was a dessert a Girl and the Goat in Chicago that was a chocolate cake served with mushroom ice cream. I tried it because it sounded crazy, but it was a perfect combination.

My grandfather used to put Black Pepper on everything, Iced Cream included (née France 1902, Wpg 1930) I've inherited that trait of his but I still have yet to try Peppered Iced Cream. Thanks for the reminder

Glen you should try making brown bread ice-cream. It sounds weird but its very delicious and popular in the west of Ireland. It looks like vanilla ice cream with speckles of brown bread. It's made with caramelised brown bread crumbs and has a really nice texture and flavour.

Black pepper would be wonderful and I will try it soon, but I am a big fan of the peppercorn mixes with green, pink and white added. It has a wonderful spicy aroma and pairs great with brandy and brown sugar fried apples. I'm sure that would be good with cherries too.

I've made lots of creamy tasting ice cream using only 10% cream, sugar and vanilla. My secret? Mix everything together and then pour in liquid nitrogen and stir quickly for the next minute or 2 until it's done. I'm retired now so don't have access to the LN2 from the lab anymore. My students enjoyed the treat, though.

Hi Glen, Hongkonger here. I'd recommend changing the Chinese title to "催淚彈味雪糕", which would be the Hong Kong Cantonese version in Traditional Chinese (used in Hong Kong), instead of the current Standard Mandarin version in Simplified Chinese (used in Mainland China). Stay safe!

I learned I liked sweet things with black pepper when my dad insisted on adding sugar and black pepper to cottage cheese. I tried it and sure enough it was pretty amazing.

I load so much black pepper on my cottage cheese people freak out and say "you can't possibly like that much pepper" I tell them to try it and so far no one has. It really is good that way. Their loss.

Black pepper cookies, chocolate cookies were the gateway for putting pepper in desserts for me about 40 years back. Usually along with cinnamon, allspice, cloves.

If you haven't done it yet, fresh or powdered turmeric would be great in ice-cream. Also a mix of cumin and coriander seeds. Combine those and you've almost got a basic curry powder, which would confuse the senses mightily but might turn out okay.

Hey Glen, The shot of the ice cream at the very end of the video got me thinking about food advertising legends/myths and I was wondering if you would make a video talking about them. The one I specifically had in mind is the idea that people use mashed potatoes to get a shot of vanilla ice cream without it melting. Since you have done a lot of work in food advertising I would be really interested on your ideas on these types of things. Oh, and as always, great video! Thanks :)

Although I think I'm adventurous, vanilla ice cream is just so happy memories and comfort food! Try a vanilla ice cream with apple juice concentrate for the syrup, with a little cinnamon. That being said, a scoop of daiquiri ice cream on coffee ice cream in a chocolate waffle cone is my favorite Baskins Robbins treat ☺️
