[Ingredients]
Anchovies (Ikan Bilis) 100g
Shrimps (a few) and its shells
Dried Shallots 50g
Garlic 3 cloves
Galangal 35g
Turmeric 15g
Old Ginger 8g
Lemongrass 4 sticks
Red Chilli 4pcs
Dried Chilli 30g
Candle Nuts 5pcs
Belachan 20g
Coriander Powder 1tsp
Curry Powder 2tbsp
Drumstick 1pc
Curry leaves
Cockles
Sprouts
Fish cake
Yellow Noodles
Bee Hoon
Tau Pok
Fresh Coconut Milk 250ml
[Steps]
Preparation of the soup base
*Add three tablespoons of oil to the hot pot
*Put in the young fish and fry until golden brown
*Put the shrimp shells and continue to fry until fragrant
*Add 800ml of water and cook for one and a half hours
Preparation of laksa base
Blend the following
*50g dried shallots
*3 cloves of garlic
*35g galangal
*15g turmeric
*8g old ginger
*4 sticks of lemongrass
*3 red chilli
*30g dried chilies
*5 candle nuts
*20g Belachan (baked or pan-fried)
*1 tsp of coriander powder and a little oil
Preparation of dried shrimp chilli paste
*dried shrimp 30g
*red chili 3pcs
*dried Chili 10pcs
*dried shallots 6 cloves
*garlic 2 cloves
*belachan 5-10g
Blend them
Then prepare a hot wok with heated oil
Fry the dried shrimps first, then put aside
Add a little more oil in the same wok and fry the rest of the blended items
When you see that the chili and oil have been separated, put the dried shrimp back in
Add some salt and sugar to taste
Stir fry for two to three minutes and it will be done
Other ingredients
Cockles are blanched in hot water for 30 seconds and then deshelled
Blanch sprouts, fish cakes, shrimps, noodles, rice noodles
The main steps
Dissolve two tablespoons of curry powder in water
Wash the drumsticks and cut it into pieces, marinate in a little salt and sugar for at least half an hour
Heat up the wok and put five tablespoons of oil
Pour in the laksa base and the curry powder
Fry slowly over medium heat until the chili and oil separate
Add curry leaves and stir fry with chicken drumsticks
Add the soup base and turn to medium heat and cook for one hour
After 45 minutes of cooking, add the the tau pok for another 15 minutes
Finally, turn the heat to a low heat, then add coconut milk, and add salt and sugar to taste
Cook for another ten minutes and it’s done
