Agar is a plant source of pectin and sugar chains that thickens things. It makes something textured like low water Jello. For biology it makes a growth substrate; they use something like chicken broth with agar to make the solidified base. For food it just makes a Jello like thing that has more structure. Many of the Jelly topping is some sort of syrup hardened with Agar and cut.

As someone who worked in a boba store, lychee jelly is just the most common flavor of coconut jelly (Nata de coco), which by itself doesn't really taste like anything. The jars we bought them in just say nata de coco even when they're lychee flavored.

Syd fun fact about agar, petri dishes used to be made of gelatin but it stank and melted easily. Agar which is pretty much gelatin but from seaweed has a higher melting point and the sugars feed bacteria cultures swabbed onto petri dishes nowadays. Same material used in science and cuisine 👍
