Baking soda only creates bubbles once when mixed with an acid and liquid. Baking powders contain both baking soda and (ussually) cream of tartar which only need a liquid to start making bubbles. Many baking powders are also double acting, giving both bubbles when wet and again when heated to a high enough temperature.

This was adorable and fun! I remember when I first made a cake by my self with my Grandma on dad's side. I did a very similar type of 2 layer cake. I was 10 in 1976. It was nice, actually. Not great in any way! Lots of crumbs in the top and side frosting. I love cooking and have been since I was 7!!!! Cooking is way more fun and Forgiving!!!! I, to this day...do not like the formulaic baking methods. I can decorate a cake well...frosting and fondant are like my love for pottery and ceramics. That's easy! Lovely Video!!!!!!
