Undying being a niche game is both a blessing and a curse. It's unfortunate that it wasn't well received enough to get a sequel, but something about that also makes it special. As for your comment about vtubers playing it, I would definitely want to see Mori do it myself. And even if you aren't used to shooter mechanics, I would still recommend you give it a go yourself.
