I'll add a shout to this, even though i already know there is. Huge difference. Not always in flavor, but a lot of the premium spices you get at spice shops are much more carefully processed, so you get less stem and chaff and more pure spice than with the store bought. Home grown herb garden is still the way to go though for all but the exotic stuff!

There's a trend in cooking shows where chefs insist on using natural vanilla everywhere, as if it's a matter of dignity. I'm all for using natural vanilla or an extract in things that are supposed to _taste_ of vanilla -- like you said, shakes and creams and the like. Using it in baked goods (especially things like brownies) is pretty much a waste of money. Not to mention that artificial vanillin is actually more environmentally friendly, even though it's made in factories; because it can be efficiently produced in large quantities anywhere in the world, the impact of production comes out less than the impact of growing, harvesting, and then transporting it across the globe in the same amounts.
@epiyawne4 жыл бұрын
I completely agree! I always have both on hand. If I’m making something plain in flavor or desserts that does not require baking, I always reach for the expensive vanilla. But for goodies that has more complex flavors, I def use the artificial one cause the common person wouldn’t have the discretion to identify the difference.
@anjmehra4 жыл бұрын
If it’s not supposed to taste of vanilla anyway, why bother putting in to begin with?
@DataumCats4 жыл бұрын
@@anjmehra Vanilla plays very well with other flavours, and much like salt and pepper it's a very good flavor enhancer and pushes other flavours forward. So you know add a bit to your chocolate cake and now it tastes like a way better chocolate cake rather than a vanilla and chocolate cake. It's also a great flavor on it's own, but is very subtle and doesn't always tolerate heat well, which is why baking with it, particularly things like cookies, is often excessive. SO unless you're trying to make something taste like vanilla, proper extract (let alone vanilla bean) is often entirely excessive. If you keep adding equivalent amounts (not equal volumes) of artificial vanilla and pure vanilla extracts into a cup of coffee and it will taste very similar, right up to the point the vanilla flavour becomes more dominate and the pure extract becomes preferable.
@dostayer33694 жыл бұрын
It really depends, baked goods where you want the Vanilla taste to shine are going to benefit from it greatly...
@alexandresobreiramartins94614 жыл бұрын
Here in Brazil it's currently forbidding to buy vanilla pods, which are expensive anyway. But when I want to make a vanilla ice cream... I just have to spend the money to buy at least one pod. Otherwise, I completely agree with you, I use the vanilla "essence" for all baked stuff. Also, I can find vanilla paste for a fraction of the price of the pods, even though it's much more expensive than the essence, and it lasts a long time.

@@vakeesan not as basic as asda smart price. 28p per jar. 6.2p per 100g. Asda Extra Special 1.25 or 36.8p per 100g. Lidl Strawberry Marc de champagne £1.29 37.9p per 100g. You dont know what basic means!!!! ;)
@vakeesan3 жыл бұрын
@@shelleyphilcox4743 I guess basic is very subjective. I would classify Asda Smart price jam as "cheap" and not "basic". Waitrose's Jam is only 82p, that is very basic to me compared to even Bonne Maman which is £2.60 per jar

Other items to compare: 1. Butter - high end cultured vs ordinary table butter 2. Chocolate - fancy brand vs single origin small batch artisan 3. Coffee - starbucks blend vs local single origin roaster 4. Cheddar - supermarket brand vs artisan 5. Tea - tea bag vs quality loose-leaf

I bought myself two ~12oz japanese wagyu A5 steaks for myself once. $300 US. I would not do it often but REALLY wanted to try wagyu. The fat melts like butter when you touch it. I was definitely afraid of cooking it myself (part of the reason I got two...). It's 1/2 inch thick, though, so cooks very quickly; just sear it on both sides for 60-90 seconds each and its done. Rare to medium rare and you're good to go. It is SO rich and fatty and delicious. I had trouble eating the single portion and spread the last third out over an hour or so. The second one I sliced up and ate it on a brioche bun toasted with butter and it was the most amazing steak sandwich I had ever had. Definitely worth doing at least once and I'll probably repeat once every year or two as long as I can afford to. It was simply amazing.

Ninja just released new gadgets in their "foodi" range a new air fryer and a air grill which is meant to give it a char grilled smoky flavour to the food but indoors which seems interesting and could be a good idea for a gadget video

What I would really love to see in a comparison series, would be between a good quality for value prepared item vs. the same item made from scratch, considering the cost of ingredients, the time required, the potential quantity and shelf life. C'mon. You know Ben is all over this one!!

Basically with all ingredients, if the main flavor is one specific ingredient (tomato, vanilla, steak, etc.) the expensive option is worth it. If you adding it with a bunch of flavors (steak in a stir fry, tomatoes in chili/soup, vanilla in chocolate cake) then the cheap ingredients are better value because you aren’t wasting money on extra flavors you will be covering up anyways.
