Yes, confusing video. Stock cheat was adding gelatine (not done in professional kitchens) and better cheat would of been to buy ready made stock from supermarket not gelatine. Risotto base is made professionally but not kept for days. You know how much you typically sell you make the days batch and adapt flavours when finishing. Vegan desserts would typically be marked as vegan on the menu. I wouldn't offer vegan only desserts but would always offer vegan options. The cartons of eggs i don't like many places do use them though. They have to be stored in the fridge and used in a short time after opening despite what was claimed on the video. Limited use for home cooks as you would have to use huge quantities of eggs to get through them. But they got in the ad for the paid event.
