I know this is an old video, but I studied dietetics and I just came here to comment that liangpi made of wheat flour is NOT okay for celiacs. People with celiac disease cannot have any trace of gluten contamination in their food, to the extent they need to avoid certain types of lip products due to their ingredients, and most brands of oatmeal (oats are gluten free) due to cross-contamination. Removing the bulk of the gluten from wheat certainly will not make it entirely free from gluten contamination. And the thing is, celiacs don't always suffer noticeable symptoms, but that doesn't mean that their health isn't taking a toll from even the tiniest contact with gluten.

Hi Amy, Roujiamo and Liangpi plus local Xi'an soda BINGFENG(AKA ice peak) is called 三秦套餐.For Xi'an people is just like Fish and Chip with drink combo so you dad definitely did something right to go a roujiamo with liangpi.

The best Liangpi I had was in my hometown - Taiyuan, shanxi about 30 years ago. it only cost 1yuan that time. It was in yellow color, so we call it Huangmianpi. So delicious, never had the same quality afterwards. Miss it so much

Actually in two of the cities I've lived in, the Chinese vegetarian restaurants were the best veggie restaurants around. They really had a knack for making vegetables seem like meat, from the taste to the texture.

Yes, Liangpi + Roujiamo is the classic set for Xi'an foods and with 冰峰（soda）. We Xi'an people just order 3 of them together every time. we actually call them 三秦套餐 lol

The best place to explore the vegetarian food, I would say, is the buddhism temples. They would only serve vegan food but very delicious or “3D sound” from you father. There is a temple not far away from Sydney. It’s called Fo Guang Shan Nan Tien Temple which is located at Wollongong. Hope Amy can check it out with your family ☺️

There are two types of Liangpi, one is made simply by steaming the starch water, it's softer and thinner and another way is by directly heating and stirring the starch water (kinda similar to custard making in a way) and then rolling it out into a large sheet. The second kind of liangpi is useually tougher and thicker.

I made this "cold skin" a week ago using organic all purpose whole wheat flour because I was having a 7-day vacation and wanted to try something different. The gluten part turned out sticky instead of spongy. It tasted ok because the flavor relies on the sauce (mainly pepper oil and vinegar), not the gluten appearance. I made the pepper oil and simmered vinegar really well. Overall, it was a fun experience.

Liang pi and roujamo (lamb) are one of my favorite Chinese dishes. I do basically consider them one dish. I never eat them separately. I find the warm spices of Chinese Muslim cooking of Xi’an to be more complex than most other Chinese styles, save maybe for Sichuan.

There are some vegetarian restaurants in China that are very good in cooking. They are delicious in color, aroma and taste. The shape and taste of meat can be made from soybean products, I hope you can taste it when you come to China.

It is actually fun to make: you make seitan and from the leftover starchy water you make the noodles (depending on flour or beans you use of course). Cut it the way you like them to be in your dish. I also saw them chubby and fried as a snack or nearly like tteokbokki 😆.
