Here in Singapore, we obviously don’t have anything close to Singapore noodles. But we are equally guilty of appropriating something called Hong Kong noodles that don’t exist in Hong Kong.

That is not a perfect Beijing duck . I can recommend some of the restaurant in sydney with perfect Beijing duck " golden brown duck" with crispy skin and and juices sweet meat. I am "golden brown duck", your father a "golden dark Abo duck". I think your father first date at the Chinese restaurant and he can not delete the memory lane . My favourite Chinese foods are : beef blackbean, Bejing duck, fry rice and BBQ pork. I managed to learn how to make beef black bean, fry rice better than any Chinese restaurant. But I cant do it with the Beijing duck and BBQ pork. Your family living in those areas full of tree and green , Dural, cherrybrook. It so sad living in winter , raining,isolated out of town out of place. I can see why you and your mum move to China . Let the Chinese migrants, aussie from Queensland, South Australia, Perth and country people live there, more suitable.

There is no such dish as Singapore noodles. You will NEVER find it in Singapore.
