Awesome scene. Not only does it have hilarious dialogue, it establishes a lot in a few minutes: showing the racism and corruption in the prison, showing Magic's volatility (and Montana's more strategic view)... and of course Al putting pressure on Miklo by alienating him from La Onda by giving him preferential treatment in front of everyone. Miklo, to his credit, seems to know exactly what Al's up to. Offering his tray to Montana was his way of undoing that damage... only partially successful.
