Cool. I find it quite interesting that a sense of provenance is a common thread in these vids. Even if the shop hasn't been there for 100 years, something has. In this case it's the moulds :3

That's very good question. Only I can tell is, the red adzuki bean has been worshiped as food with "the positive power" which expelled a divil for a long time in Japan. It is for this purpose to cook steamed rice with red beans on a day of happy ceremonies. This is one reason why an Azuki bean has been use for a Japanese sweets for a long time. And of cause it is delicious indeed, people love it :) I hope this helps your question.

As well as good luck, people cultivate the Azuki bean all over the Japan wherever, I think that it was easy to process it into a sweets.
