This is such a good idea to freeze them until you have time. On the plus size it can help heat the house in the winter too instead of heating it up mid summer.

Great idea to use everything you can. I hadn't thought of using the crock pots along with the soup pots on the stove. I do wish I could find a stock pot that was wider rather than taller to keep things a little more even and not get scorched on the bottom.

Haha yes most people look at an our large harvests and wonder how we could ever eat all of that food. That is one of the reasons I wanted to film the tomato processing video because canning up and preserving the harvests is a big part of why we garden. 🤗❤️-Cara

I got an instapot at Christmas and saw a video where they put the lid in the slot. Mind blown I was leaving it on the side too but such a great feature. I still have my tomatoes in the freezer glad I’m not the only one. I think it makes a nice winter project instead of rushing it all in the autumn

Right!?! My mind was blown too when I realized you could do that. I have had mine for a few years now and I never realized that. You are defiantly not alone on that. Most of my tomato harvests each year stay in the freezer until winter time when the outdoor projects have slowed down. (they never truly stop around here haha) -Cara

You make the process of canning seem so effortless, you are calm and informative and I love watching you in the garden which is also my happy place, either there or in the kitchen. I love to cook and to watch other people and their way of doing things, you are never too old to learn a new skill I believe. Your family are blessed to have you. BTW I come from Newcastle NSW, Australia, a couple of hundred kilometres up the coast from Sydney. I was born here and hopefully always live here and I love my home. We have the most incredible coastline and nearby is also the largest saltwater lake in the southern hemisphere. We are only about 30 minutes away from beautiful vineyards and farming.

Wow, I was surprised when you added flour into your quiche mixture, why? What is the purpose of the flour? I've never ever added flour to the egg mixture...just wondering, no criticism at all 😮

I like the texture that the flour gives the quiche. I feel like it helps it be a little fluffier. I should do a side by side comparison one day to see the exact difference. 😊-Cara

Love the idea of puree first. I have been freezing my tomatoes for couple years. I need to do something with what's left from 2023. I need to can some tomato sauce.

Just a hint a knife can causes scratches in the jars instead use a chop stick. I used citric acid this year and you have to put in a touch of sugar to cut the bitter taste. I can taste the lemon juice when i canned tomatoes. Good video.

Oh thanks for the tip about the knife, I will use something else next time. I like a touch of sugar with my tomato sauces too, I think it helps cut that slightly bitter aftertaste flavor sometimes tomatoes can have. -Cara

I am just learning to camp, haven’t done it yet but I’m curious if you add onions and garlic to the tomato sauce does that change the processing time in anyway? Can you add basically anything you want to pasta sauce?

If you are just starting out I would follow a canning recipe to be on the safe side. My grandmother never used put lemon juice or citric acid in her sauces and threw whatever ingredients she wanted in it. She laughed at me a little when I told her I was going to add lemon juice haha. Most canning cook books do recommend at least adding the lemon juice or citric acid. From my understanding the biggest concern when adding other ingredients is that it may reduce the acidity level of the recipe. Always do research and do what you feel most comfortable with for your family. I just used a water bath canner here, but a pressure canner would cook the sauce and make it even safer if that is a concern for you. I and to go the route that home canned food has to be safer than anything in the grocery store regardless so I don't mind adding extra ingredients as long as I bump up the acidity with the lemon juice or citric acid. Yes indeed! I mix them all together. Just be sure to add the lemon juice or citric acid, because some tomato varieties have a high acid concentration than others. 🤗❤️-Cara
