This is wonderful & inspiring! I have never tried making hard cheese but have always wanted too! Can you do a hard cheese 101? Or even a series? I also wonder about your cheese cave. We don't have great food storage in our home. We use every little nook & cranny to store our canned foods. How difficult do you think it would be to do in small batches? For some reason watching you had been the most inspiring to think this is something I could actually do.

We always have Mac and cheese for thanksgiving and Christmas. Born and raised on a farm in SC my 94 mama and 92 daddy did not have pasta. As my sibs know if mama had to make a sauce, we would never ever have Mac and cheese. Mama layers Mac and cheese then into milk an egg and little mustard. She pours over Mac and cheese. It is in demand at our house.

Love your videos and your goats! You make everything look so easy to do. I don’t have a homestead as I live in a city, but I do have 3 dogs and 3 large parrots, and a large container veg garden. I compose and did vermicomposting until recently. You have a great personality. I used to show dogs in obedience.

The cheese and the Mac & cheese look sooo yummy! I always have a hard time with the sauce -you make it look so easy. My kids were never turkey fans so I used to make either chicken enchiladas or lasagna for Thanksgiving dinner. Hope your Thanksgiving time with family was nice. Thanks for sharing! Love your videos!

When my Aunt and I make baked macaroni and cheese we never make a sauce we lay our the noodles and cheese together with a little milk in the bottom for moisture. She uses American and mozzarella and I like to use a different varietys of cheese one I do love is asiago. 🦃🐖🦃🐖

I'm a Mac n cheese purist too. I do like to make it with pepper jack sometimes tho. This looks yummy and that cheese looks great. Can only imagine how much better it would be after aging for 6 mos. I don't have goats yet, planning to get in the spring. I can't wait to try my hand at cheese making.

Ms. Crystal, For a Bechemel, or Mornay ( Basically a bechamel with cheese added ) sauce, 1 tablespoon of butter to one tablespoon of flour and one cup of milk per tablespoon of flour. For example your Mornay sauce used a stick of butter. A stick of butter is usually 8 tablespoons. So eight tablespoons of flour and eight cups of milk. Then add cheese to your taste.

I absolutely love your videos! I hope you guys are doing well during the corona virus scare. Things are really crazy. I happen to be on forced quarantine because of an immunodeficiency, so I'm watching all your videos. I just love the baby goats and all your dams. I think I'm finally learning all the names. Just a thought for you guys, goats milk soap is a huge seller. I'd buy from you guys and so would my friends. I have a lot of people who would be interested in homemade goats milk soap. I don't know if you're interested in selling, but I know people are interested in buying. Soap is far easier to make and sell then cheese (especially across state lines). However, if you were interested in selling your cheese, I would love to buy it! Have you ever made Gouda? Can you make gouda with goats milk? I buy fresh smoked gouda from a small cow dairy right now. I love goats milk cheese though. Anyway, just thought I'd say hi and finally comment. You guys are really great! I'd love to have goats, but as I said, my life is a bit complicated. It's really wonderful to watch you though. Thanks for the videos!

I have to ask...does it get that 'goaty' taste? With all the goat cheese I make, I find that, for the most part, I can only eat it the first few days before it takes on that disgusting flavor and becomes dog treats.
