Was the other cloth a butter muslin? That cheese looks so good. No matter the little imperfections. It’s rustic and handmade with love and passion instead of robotic mechanically factory produced. We’ve gotten so programmed to want only perfect looking food but the best oranges I eat come from the MaMaws orange trees in south Louisiana and don’t look perfect. 😋

The cheese cloth that you used is good for the initial pressing and the final pressing. Multiple layers is where the issue is. Too many layers and the cheese try to absorb it into the center.

After the 2nd press I noticed some white dots on the cheese, I think maybe the cloth in the new press might actually be releasing more liquid then the other because it’s thinner, maybe hanging the cheese with the thinner cloth would be a better option. Iv never made cheese before though

@BlueCactusDairyGoats4 жыл бұрын
There are many steps after the rennet coagulates the milk. Those other steps are what make each cheese different. Cutting the curds also allows the whey to release. Have to get the whey out and be left with the curd to make the chees :)

Hi Crystal ! I don’t make cheese but was thinking , could the clothe have dried out a little to much ? Does it take a certain type of cheese clothe? I do love cheese curds. Coming from the dairy state you can’t help not like them. I’m sure the taste will be delightful. Thank You for Sharing. 👍👍👍😊

I wonder if there is some sort of cheap beam style torque wrench that could be adapted to your cheese presses so you can tell how much pressure you're pressing? I have no idea but maybe if you dipped the cheesecloths in the whey between pressings?
@BlueCactusDairyGoats4 жыл бұрын
That would be awesome if there was! The cloth was already wet from the whey when I initially dipped it. I think it was the multiple layers that did it in.

Where are you getting the recipes for your cheeses?
@LoriPatrick-z9oАй бұрын
I made your Farmers cheese and GM caramel the other day. Unfortunately, I overcooked the caramel, it was too thick and hard but is still yummy. Lesson learned. Also, I try to stick to a low carb diet (because being a fat chick is never what I want again 😅), so I used Monk fruit. It said 1:1 sugar replacement and I think it worked good. I made keto chocolate chip cookies for Christmas and added rolled chunks of my caramel, it was very good. Not ready to try this cheese yet, don’t have a cheese press. I am going to make keto custard GM ice cream though. Can you share the link for the Kitchen Aid ice cream attachment again? When I tried to go to it, it said not found. Also, could you share the link for the best cheese cloth to use. Thank you for all your videos and instructions, I have watched many of them and you give me the courage to try something new and kinda intimidating. 😊

Hi from TX. I made Jack cheese today and I too managed to have the curds stick to my butter muslin. Not happy!! But an idea occurred to me...My press is not like yours, yet it is -- in that, I do not have weights either, just have to squeeze until I 'feel' like it is right. Wondering if we are squeezing too tight too quickly and causing the curds to be squished in the muslin. Any thoughts?? Cause those squished curds in the muslin is a real pain to clean!! Obviously, not my first.

Oh, Oh, Oh. Please link where you get your preferred cloths. Thanks.
