@@RootsandRefugeFarm I know this is an old video, so not sure if you will see this, but what if you don’t use a microwave? My husband and I haven’t owned one our whole marriage (by choice) and are starting our first goat herd. Do you have suggestions for people who don’t use microwaves but still want to make cheese?

@@dre.ale.1191 if you're using raw milk, you can heat the whey and melt the mozzarella curds in the whey. With pasteurized milk, unfortunately, it won't melt in the heated whey. You can do a search on KZbin or Google to find out the temp to heat the whey for melting the curds.

My Dad was a licensed cheesemaker and one of the cheeses he made was mozzarella. The cows milk they used always was pasteurized, my Dad was pasteurizer certified too. I had no doubt the pasteurized milk would make mozzarella. It was cool to see how to make cheese on a small in home kitchen scale. Thanks for sharing this video. Dad has been gone for almost 6 years, and this video brought him back for a few minutes.

You honestly have made my small dream of owning a homestead seem much more achievable than i originally thought! When i met my husband we hadn't really thought about it and since we've been married our health had been declining with thyroid, autoimmune diseases and vitamin deficiencies. Part of that has been because our eating habits and just not eating whole delicious fresh foods and not getting outdoors like we used to. I personally am more of the picky eater but I want to try to start making an effort to try new things and expand my tastes through a small garden on our apt porch. I haven't actually achieved growing any thing to harvest yet, I have kept on trying and this is my third year to give it a go! I'm preparing my stuff to start plants at the correct time and use a lot of what i have learned from watching you and teaching me tips I can use(I live in N. TX) and it helps to know little tidbits you add in your videos! You and your sweet family are such a delight to watch and see someone living in a way i strive to and it's so incredibly inspiring! I hope that you know how important a resource you guys are and how amazing it is to spread such happiness and knowledge! Keep up the hard work and I can wait to join you in having a homestead and a great way of living!

on KZbin if you look up making cheese with powdered milk you will get a number of channels that claim it will work so i am not surprised that the pasteurized milk did. Thank you for all the wonderful content you do a lovely job and explain a lot with enough detail that even a beginner can understand all you do

This is so funny because I was wondering if you ever made goat milk mozzarella. This is why. Your husband seems to be really talented with building stuff and I'll bet he can make you a really great Italian pizza oven. It would be great outside on your property. There are lots of instructions on KZbin) And you can also roast meats in a pizza oven. I can only imagine how great your pizzas would be with the mozzarella you make and fresh tomatoes, garlic and holy basil all from your garden! I have been after my husband who is from Italy to make one but he just doesn't have that gift of building. Anyway, I enjoyed the video and I will have to give mozzarella making a try. 💐

Holy Cow! Success the first try. Easy! Delicious! I'm keeping the whey for cooking (or treat the chickens) and I gave the cooking water to my dog. He loved it! No waste here. I'll be making this often.

I've used store bought cows milk and I follow your method except I microwave it in 1 minute increments instead of 30 seconds. It always turns out good! Love your videos!

Very good job! We love making homemade goat mozarella! Have you ever made string cheese sticks by stretching it out long and folding and long and folding etc. Then cutting it with scissors when long. I have a mozzarella video showing that fun technique at the end. Great video! Xoxoxo

Thankyou for the comparison. Raw milk is banned in Australia (for human consumption)- unless you own milking animals. So all our milk is pasteurised. It will be good to give this a try

Jess you are such an inspiration. I really miss living on acreage (did the usual move to the city for $$) Hoping my husband and I can buy property with a little land soon! I really love your down to earth nature. & your gardening tips are the best. Built myself a little planter so hopefully I can grow some tomatoes here in Sydney whilst we save for our property :) I honestly don't know how you manage to do all the things you fit into your day whilst looking after your family but hopefully I can get there some day!!!

You have answered all my questions! It’s illegal for farmers to sell farm milk her in Manitoba Canada. So it’s next to impossible to get unpasteurized milk. I will try store bought milk! Thank you again.

Hi Jess, you are never going to believe how you helped me. I had made a batch using regular milk and it turned out like cottage cheese before I got it right with trying again with RAW COW MILK. But here is my news, I hadn't tossed out the cottage cheese effort yet, so I thought I would try, the microwaving it for 30 second intervals and see if I would get the elasticity that you got and salvage my effort. Whallah!! It worked!!! Like you said, not as much stretch, but enough to make a bunch of cheese balls that taste great! The microwave fixed the crumbling (no stretch) initial texture. Ty😊

Shirley Wright it isn't too hard to get raw milk, but you have to get to know someone, who raises goats, to the point where they trust you. Start making friends at the farmers market. I haven't been to Hamilton in many years, but there used to be a big market.

Thank you for your video. I tried it with raw sheeps milk and it was a bit of a fail. The % of fat in sheeps milk is higher than cows milk so I'm going to experiment a little to see if it gets better. Maybe it needs a little more or little less rennet or maybe I need to skim the cream off the top a little to reduce the fat content. Your information has been so useful.

I was able to find rennet tables at Kroger and Citric acid at H-E-B, its next to the canning supplies there.

Thank you for the experiment! From what I read it seems like the homogenization process also affects the curd properties. Like your experience I haven't seen non-homoginized milk even though I've read it exists.

Lovely to see this. My first job out of High School was making mozzarella (cow's milk). The facility I worked at bought milk raw, pasteurized it on site, though it was NOT homogenized, which I think makes a difference.
