Bohra Recipe :Chicken| Mutton kaari is a traditional recipe among Bohra community.
It is prepared occassionally in every household. It is very easy recipe that requires a special masala called kaari masala.
With this same masala you can prepare Mutton Kaari (curry) or egg Kaari (curry).
Most of them prepare this masala at home or buy it from Shop.
Bhendi bazar in mumbai is quiet famous for this masala.
This masala can be stored for 3-4 months or more.
Ingredients for Kaari Masala.
Peanut-20g
Cashewnut (Kaju)-15-16
Dalia- 3 tbsp
poppy seed (Khas-Khas)-3 tbsp
Sesame Seed - 3 tbsp
Black pepper- 30-35
Coriander Seeds-1 tsp
Methi-1 tsp
Rai-1 tsp
Sauf-2 tsp
Jeera-1 tsp
Elaichi-2 cloves
Chakli phool & cinnamon Stick- 1
Cloves (Laung) - 4
Ingredients For Chicken Stock:
Chicken - 1kg
Ginger-garlic Paste- 2 tsp
Salt to Taste.
Other Ingredients:
1 whole Coconut Milk
Bay leaves-1
Few Curry LEaves
Tamarind Water- 1/2 cup
Turmeric Powder-1 tsp
Chicken Stock Preparation:
-In a Pressure Cooker Add Chicken,Ginger-Garlic Paste & Salt)
-Whistle for 3-4 & Keep Aside.
Kaari Preparation:
-Firstly Grind the Above Kaari masala Ingredients into fine Powder.
(you can store this grinded Masala in a Refrigerator for 3-4 months)
-Now Soak this Masala in a water for about 15 minutes & Grind Again for more smoothy Paste & Keep Aside.
-Heat 5-6 tbsp of oil.
-Splutter with Curry Leaves, Bay Leaves & Chakli phool.
-Now Add Prepared Kaari Paste and Saute for about 15 minutes on a medium to low heat.
-Then Add Turmeric Powder & saute Again for 5 minutes.
-Now Add Coconut milk , Chicken with Stock & Tamarind water.
-Stir
-Cook for more 15 minutes or untill oil Floats.
-Serve with Jeera Rice.
