Recipe for: Boiled Chicken. Fragrant Clear Soup with Lots of Vegetables and Tender Chicken Meat. Delicious Recipe!
Necessary products:
1 chicken (about 1.2 kg.)
2 onions, sliced
2 carrots, cut into wedges
3-4 stalks of celery, roughly chopped
1 red pepper, coarsely chopped
3-4 potatoes, roughly chopped
150 g peeled tomatoes from a can, cut into large pieces
1/2 bunch parsley stalks, finely chopped
1/2 bunch parsley leaves, finely chopped
Salt
Black pepper grains
2 bay leaves
Method of preparation:
Put the chicken in a pot.
Add enough cold water to cover the chicken.
Turn on the stove.
Wait for the chicken to boil.
Skim off the foam that forms.
Season the broth with salt, pepper and bay leaf.
Let the chicken cook over moderate heat for about 40 minutes.
Remove the chicken from the pot and let it cool.
Strain the broth into another pot.
Turn the stove back on.
Wait for the broth to boil.
While waiting for the broth to boil, caramelize the onions.
Heat oil in a pan.
Add the onion and caramelize it until golden on both sides.
Add the parsley stalks, celery, carrots and potatoes to the already boiling broth.
Stir and let the vegetables cook for about 20 minutes.
During this time, debone the chicken and cut it into large pieces.
20 minutes later. Add the peppers, caramelized onions, and chicken to the soup.
Stir and cook for another 10 minutes.
10 minutes later. Season with salt and add the tomatoes.
Add half of the chopped parsley.
Stir, wait for the soup to bubble and turn off the heat.
Finally, sprinkle with fresh parsley.
