Amy roll up a paper towel and put near the onion when you cut it and the paper towel will absorb the onion fumes! Looks great!

Yum! I'm definitely trying this. I don't eat a lot of red meat or pork, so I will sub in ground chicken. I use concentrated tomato paste that comes in tubes, too. It is so much better than the paste in cans. Give it a try, Amy. You'll never go back to the cans. (p.s.: It's Bow-luh-NYAY_zay.)

Really appreciate you. You may want to fry onions first, then celery, carrots, garlic then the meat. You need the fat from the meat to taste. All cooked in the same pot. Then add tomato sauce, paste, wine, bring to a boil. You can also add bay leaves, oregano. Salt and pepper of course. Cream too.

Just a note....use kitchen scissors when cutting meat such as bacon and etc. into tiny pieces....the process goes much quicker!!!!!

Love watching you cook. No professionals here. Some turn out, some don’t. So realistic. That’s the fun part. Then when Chris makes an appearance, so down to earth. One small suggestion. That you tie back your hair as you cook and I realize you lick your fingers but that’s ok cause your making the meal for your personal use. So keep cooking. Love watching.

I agree 100% on that. My mama was a wonderful cook and she never measured anything that I know of. She could throw a meal together in just a short period of time. She would always cook extra incase someone stop by the house. They would always be someone to show up I think they knew when she had food ready. No one ever left our house hungry.

I have made this sauce for years. Another secret ingredient is to add a pinch of sugar to sauce. Yes sugar along with the wine . It adds to the layers of flavor . I also add fresh chopped basil at the very end . Not so early or it will make sauce bitter. Mushrooms and sweet o peppers add to the layers . Going to try a bay leaf next time . Love your authentic cooking style and your everyday recipes. Keep it up!

I've made this dish before, Chef Ann Burrell's recipe. It's very rich with flavor and in her recipe you puree the onion, carrots, celery, and garlic into coarse paste. And red wine is best!

Once you peel the garlic lay it down on your cutting board take the side of your knife lay it on the garlic Smash It Against garlic and Cutt it on the Board it'll be smooth and then cut it with your knife they did all the garlic that you cut in all the juice and put it into your pan there's a tip for you, let me know if it works for you Amy👍👍💞

Amy, sweetie, you can cook, but you DESPERATELY need some lessons on Italian cooking terms. It is BOWL-LA-NAISE. It rhymes with Mayonaise. You do NOT pronounce the G. Also, in regards to other videos. Pancetta is Italian bacon. Prosciutto is expensive, thin Italian ham. My last name should recommend my definitions.

Don’t be so hard on yourself, you could have left the carrots and celery the way it was, it will breakdown in the sauce. Also, you don’t need to pre cook the meat, it will dry it out add it raw and it will enhance the sauce.
