In a way though the whole process is pretty effective in showing what ingredients are essential to the recipes and what ingredients are barely discernible in the final flavor and therefore can probably be left out or substituted. I find it quite unfair when Chris detects an ingredient but its in the "sauce" instead of the "toppings" ... like the man is doing this blindfolded. He is getting the raw ingredients right and I think that matters more than being able to magically distinguish whether it's in the toppings or sauce when they are all mixed together. Alas, its an arbitrary grading system, I'm still blown away with his accuracy. I'm way to indecisive to pull anything like this off

When I watched the first couple episodes, I thought about this and it irked me too. Because as you say, the ingredients are mashed up and it's almost impossible to distinguish if it's in the topping or sauce, whatever. However, the ingredients are indicators of how the dish was assembled, so to compensate I think the the editors should highlight the ingredient in green, but add an X to indicate it's in the wrong part.
