I can't tell you how much I enjoy these videos. Brad, the recipes, the techniques... But the editing, captions and production are over the top. I enjoy the drop-ins and effects as much as anything. Great crew and great creativity. Love it.

I took the time to make this. A little different flavor profile on the ferment, onion, garlic, ginger, jalapeños, gochugaru, toasted cumin, fennel and coriander seeds, fresh thyme. Let it go for 6 days… As a BBQ mop sauce, I didn’t really feel it (added mirin, sugar, soy sauce etc), but as a fresh sauce… it’s actually got a really nice, fresh, tangy magic going on. Definitely worth playing with. Might try it as a fresh salsa with grilled fish next.

I have a question so when you're fermenting in a jar like this with a cheese cloth or coffee filter on top, do you need to keep the lid on for the fermentation to happen or could you just put a rubber band round the filter/cloth? Will not having the lid on it cause it not to ferment?

I’ve got another trick for you Brad. If you use a clip top Kilner jar you don’t need to burp. It burps itself without exploding. You just need to put the jar in a bowl to catch anything that leaks out. You’re welcome.
