crazy how much time has passed. I first watched him on "Obsessives: Pizza" back in high school (2008?). His philosophy has expanded (toppings on pizza), but his core values are still super intact and he seems as obsessed as ever.

Chef Anthony is absolutely uncompromising in his labor. Super impressive to see how focused and dedicated he is. Also quite interesting that his drive to improve and perfect his product is combined with the fact that he sticks with certain suppliers and tools. Wouldn't those degrade over time?

@@Ash_Wen-li Fair enough, I think ultimately it comes down to preference and maybe I'm a little desensitised (the first time I went to Naples my mind was blown, the second time less so and so on). But I'd also argue that an OK NY pie is fairly palatable, whereas an OK Neapolitan is just a soggy mess
