I really like that Miz is very open to people trying things and using ingredients that are easier to find, plus explaining the history, it's just a good time. When you see someone billed as a comic you expect wackiness, which can translate to a giant mess (fun! just. a mess) and she's staying well on task while still being fun. And super genuine! Explanation for onions and freezing: In chemistry we have a concept called solubility of gases. The solubility of a gas increases when there is increase in pressure or decrease in temperature (cooler temps). Onions have sulphur in them, so when you cut them, the sulphur oxidises due to their contact in air and waft up to your eyes, where they come in contact with the water in your eyes and hydrolyse to make acids. These acids irritate your eyes due to which your body produces tears to wash it out. When you cool the onions, the sulphur gas becomes more soluble in the onion and thus does not get oxidised as easily. Hence making you cry less

Yes Chef... you are correct, it is the sulfur in the onion that causes the reaction between the sulfur and the water in your eye... but freezing an onion reduces the volatility of these sulfur containing molecules, volatility is the ease at which a molecule can turn into a gas... lower volatility... less gas... less sulfur reaching your eye... less sting... hope that helps :)

Wow, I didn't know that they were part of jewish culture under the name of "Latkes" :D Here in Germany this recipe is eaten by everyone regardless of their religion, and it's seen as a traditional german dish, too. Here it's called "Reibekuchen", which literally means "grater cake" - a pancake which is produced by using only a grater (and the stuff to fry them, obviously :D). At this time of the year you can find delicious Latkes/Reibekuchen on every Christmas market and many similar occasions. We usually eat them with apple puree as a sauce and sometimes a warm soup as a side dish. Love to see that we actually share this simple yet awesome recipe with other cultural groups around the world - Latkes for everyone

Kartoffelpuffer (potato puffs?!) You can add a bit of nutmeg and chopped parsley to the batter. Tastes great. I always have them with apple sauce (Apfelbrei), husband with smoked salmon and horseradish and creme fraiche mixture. I like them also very crips on the outside and with small soft heart, not very soft and soggy.

the applesauce didnt seem too wierd for me, becuase here in Poalnd we have a very similar meal called 'placki ziemniaczane' (potato pancakes) and in my house they were always eaten with sour cream and sugar! so a fried potato-onion cake with sweet sauce seems perfectly normal to me haha

Here in Poland we make a wariant of those, called "Placki Ziemniaczane"(Potato Pancakes), the biggest change is - we don't use baking powder. We also serve them with different sides - ketchup, sour cream, sugar or my favourite - "po węgiersku"(Hungarian style), sometimes called "Jadło Drwala"(The lumberjack's food), that means with "Goulash" poured on top(it's a type of Pork stew with mushrooms and other vegetables). I am Polish, English and Irish and we make the same thing. We just call them potato patties/pancakes. Ours can be with made with shreds or with M Potatoes. But the ingredients are the same. Not sure where the family got the recipe, but, LOVE these!! I ask for them as much as I can! This potato "whatever" you want to call it, is the BEST!!! LOVED the way you two showed everyone how to make this wonderful food item so, it won't be lost to the next generation!
