I’m the proud daughter of the inventor of The Durand®, Mark Taylor (which he had patented in his 80’s, by the way!) - and I suspect you’ll appreciate knowing that it was actually named for his dear friend and mentor, Jean-Pierre “Yves” Durand, a world-renowned master sommelier. Yves would lead rousing cheers in French at wine tastings, where his incredible knowledge of wine was only exceeded by his joie de vivre!

The coravin was a game changer for me. I felt guilty opening a bottle before i got one, and never really drank wine beforehand knowing i only had a glass every few nights and it’d noticeably degrade in quality. Both my enjoyment of wine and the wines i got have improved since.

I remember one time where my grandfather was opening a bottle of champagne for some celebration, he was having a hard time with the cork and we asked him if he needed any help he said no and after a moment of struggling pulls the bottle back to look directly at the cork, at which point the cork decides now is a good time to release itself. Most spectacular Black Eye I ever saw and the most embarrassed I think I ever saw my grandfather.

Just wanted to say that André Mack is an expert and he knew that bottle might explode when he sabered it. This most commonly happens when you leave the bottle out and don't super chill it before sabering. I usually don't remove the cage when sabering, but everyone has their own style. Respect!

I've done sabering twice with a real sword, it's really fun. I was told that as well as the bottle being cold, you want to run the blade down the barely visible seam where to two halves of the bottle are fused together, where that seam meets the lip is where most of the stress gets concentrated and you get a nice clean break right below the lip.

The durand can be used to remove a cork without damaging it such that it can be recorked with a proper seal, provided you don't use the screw combination.

Today Sabrage only works well on Champenoise bottles due to glass in other bottles being generally thinner and not suffering the typical stresses produced by the disgorge freezing.

I was working for Total Wine when the Coravin first hit the market and it really was a game changer for high-end consumers. My store had extremely wealthy clientele that would come in once or twice a year or so to stock their cellars, pretty much only dealing with myself or my manager directly literally dropping well more than my annual gross at a time, sometimes even 3 or 4x my annual, and when the Coravin hit pretty much all our high end clients each got at least one and began coming in much more often to see what was new that they could use it on to see where things were at for themselves and then commit to larger quantities later.

7:49 that's actually a neat trick for flashlights in general. Shine it upwards onto a white ceiling and it bounces back down, lighting the room like a regular ceiling lamp. It'll be darker, but everyone can see evenly with lighting they are used to without risk of being blinded by the beam

It was always on my bucket list to saber a bottle of sparkling or champagne and I finally go the opportunity this past winter in Vail, Co to kick off Happy Hour at the hotel I was staying at. Went smooth and was such a cool thing. I was told that there is a small seam that is barely visible in bottles and that seam is best faced upwards because it's a weaker part of the bottle. I used a napkin to hold the bottom and pop! It was awesome.
