I've said it before and I'll say it again; the star of this channel is the editor/s! To distil every person's personality like they have has created characters and subtle narratives that I find so compelling to watch. The food is superb, but it's the dynamic the team have and the way it is portrayed that keeps me coming back. Great people. Great channel!

My wife who lived in Beirut for 2.5 years keeps raving about the toum sauce in Lebanon. Now finally I have a recipe from a reputable source (Tawleh) that I can follow to make this for her. (Btw, someone should make clear to Andy that toum literally means garlic in Arabic :'D)

The onion with parsley and sumaq is called biwaz in Syria, specifically aleppo, and we use A LOT of parsley and lemon juice. Also toum and biwaz are just as important as the meat when it comes to a middle eastern BBQ, with the addition of grilled onions 😋 We love our onions and garlic 😂

@MANUEL IGNACIO MOLINA GARCIA Here in the Middle East you would never find a household that would use egg whites only restaurants use it since prevents the sauce from splitting so that they can store it for longer. There are two versions of thoum the fluffy stuff they make in the video which is mostly used in marinades and there is a thicker sauce for dipping which uses starch and less oil which is called mothouma.

Toum has been my secret weapon for a long time. I'm so glad to see it getting some time in the spotlight. It's for sure one of the best condiments ever. Try it with roasted or fried potatoes for a life changing experience.

@@ChrisPBacon-dk4kz Apartment in NYC by code have to have a fire escape either at the front or back of the building. I don't know about new builds but since most places not built from the ground up are old, they have them. High rise apartments don't those with over 6 floors, so maybe he lives in a high rise. You can just imagine him being saved by a beefy fireman being carried out of the building LOL somehow he would have that luck.

I'm not sure the majority of New Yorkers have fire escapes. A lot of apartments (even older ones) are higher than a few stories and houses/townhouses with multiple units are also pretty common, especially outside of Manhattan. Not sure about Andy's situation though because...I'm not a creep

This is the first time that I am so familiar with a recipe on BA . My mom makes the best pickled turnips, takes about 2-3 weeks to be ready. Maybe Brad can try experimenting with them since its technically a fermentation process!

Made this and it blew my boyfriend‘s and my mind!! Delicious! Especially the combination! We didn‘f have the pickled turnips but I will get them next time. Bought Arabic pickled cucumbers and loved them. Way more than the normal ones, as they were a bit spicy! Our bread was a bit too dry but it added extra crunch, which I would somehow try to get again next time by drying out some of the bread and putting it in. Also, we added more parsley. The chicken was delicious and tender! Just have to find the right ratio so that it doesn‘t get overpowered by the other ingredients. Definitely making this one again.. and again and again!

There is NOTHING like the smell of fresh pita coming out of a blazing wood oven! Watching this I was filled with memories of my time walking the streets of Adana, Turkey, just wandering from pita shop to pita shop, following my nose and eating pita and Adana-kebabs of lamb meat just smothered in smoked paprika from a dude squatting on the corner with a hibachi doing kebabs and parched corn on the cob. A little yoghurt with dill and it was a fantastic "fast food" meal, Middle-Eastern style.

Ahhhh oh my gosh, I have always wondered what the amazing garlicy sauce was, because typical garlic sauces you can buy don't taste quite the same. I love this just for the recipe for the Toum alone!!

This is basically called Tawook. The only difference from the traditional one and this, is that the chicken is usually cut into small square-like shapes.

OMG Andy making Toum!! growing up in the middle east everyone is obsessed with the garlic sauce. literally goes with everything! so delicious! and I've tried making this before, but instead of egg whites I used mayo to make it fluffier and balance that garlic taste. Toum with Sharma, kabsa, fried chicken, fries! omg.

That Onion/Parsley/Sumac mixture is truly one of the most under-rated aspects of middle eastern cooking. Every shish kebab/shish tawouk/shawarma/gyro/ roasted meat item coming from in and around the middle east should be paired with it in my personal opinion. As a Canadian-Armenian with parents who grew up in Syria and Lebanon, this is what I grew up eating. That final presentation reminds me so much of my childhood (and also what I ate last weekend) haha!

Reading garlic toum and as I speak arabic, I just read it as Garlic Garlic (Toum means garlic, and apparently a sauce in Lebanon?)

Lebanese person here (or at least ethnically, don't live in Lebanon currently but did in the past), never have seen toum considered a sauce before. Maybe there's a thinned out version of it that I'm unaware of? But I've always seen it be used as a paste or a spread.

Red Productions I’ve seen some places like “water” it down with mayo, so it becomes more sauce like, but I prefer it is it’s thicker paste form.

You just saved a life with this recipe, Andy. About to making a whole batch of toum every week now, can't be bothered with buying yogurt but I ALWAYS have oil, egg whites and garlic.

I love this video! I have spent a bunch of time living the Middle East and love meals that this. I always loved what I could only describe as a thick fluffy white sauce that I knew was NOT tzatziki. I have wondered for years what it was and how I could recreate it, thanks so much Andy for answering my question and now my life will be filled with toum!
