Lucas is beyond national treasure level. The way he surgically breaks down the cooking techniques, flavor profiles and texture complexities is just mind blowing. His simple way of describing things makes people who aren't professional chefs to be able to understand and as well as feeling not too afraid to try new food and cooking techniques.

Great find, Bon Appetit -- Lucas is one of the most well-informed and enthusiastic hosts and chefs I've seen on a food show. He's the foodie friend who is also secretly an academic. Makes you want to try out everything he's cooking and eating. More of this series pls!

I grew up in Chaoshan , and the oyster omelette I grew up eating was usually topped up with some chopped coriander, and you can dip the omelette into a sauce made by simply mixing some fish sauce and white pepper. It gives a bit more kick and umami to the oyster !

Lucas appears to be relatively young, and yet his has such a wealth of knowledge about Chinese (Asian)cuisine! His narrative is so concise, and yet, he is speaking impromptu. He a delight to watch and listen too!😊👍

I'm so happy to be getting more Lucas content. He's such a passionate and knowledgeable teacher. I've made or gone out and sought at a restaurant most things he's cooked/eaten. He's just so enthusiastic about the food I get massive curiousity and FOMO to eat it myself! 🤩

I had my first trip to BKK earlier this year, and it was food heaven. Super happy I got to come here and to Jay Fai among many other prominent and decorated food stops, and these videos are making me crave all over again lol. Lucas does a great job of not only explaining the food, but also loving and deeply appreciating every step.

Didn't expect to see Bon Appétit's vid in my country. And yes I highly recommend "Nai Mong Hoi Thod" is one of the best oyster omelet in Thailand if you have a chance to go to Bangkok don't miss this!

That red-orange sauce is actually the real "Sriracha sauce" or Thai's chilli sauce similar to it, not like the one selling in the west.

There are plenty of street food vendors around South East Asia that cook with two wok spatulas - I've seen this technique used with multiple dishes - Oyster Eggs (prevalent also in Malaysia and Singapore). Fried Koay Teow and Fried Radish cake.

The equipment would make such a huge difference here. He's got a wok burner flaming a cast iron plancha, which would typically be used for paella. Can't rock like that in an apartment kitchen.

You can see the chef adding a dash of msg/salt to the oysters at 4:28. So yeah Lucas the dish isn't just seasoned with oyster sauce!

hello ba, egg oyster with fresh oyster - whatis the green sticks - is that chinese chive or cilantro - thailand with oyster is the first one in appetizer. this dish is usually in queens chinatown known as taiwanese plate with oyster rice noodle porridge. it's in a smaller bowl than rice porridge. think some people use red vinegar in the rice noodle soup. thank you again - hope you get a larb ground meat episdoe in. elle for non-curry 2
