I remembered that Long John Silver made a plum duff in "Treasure Island," but I didn't know what it was (that's why I remembered it). I've always wondered what a duff was, and now I know. I'll have to try it because it looks good and because it's so different from anything I've ever tried to make. Thank you for the lesson and the recipe(s). I'll certainly use the caramel sauce on lots of things.

Very nice presentation. : ) For years we've been making "steamed sponge puddings" as they are known in the U.K. and they are essentially the same recipe that you call a duff. I've never had a steamed pudding made with blue berries. It sounds and looks just great!

I'm so glad you enjoyed our recipe and video, we have puddings and duffs and the only difference is one got eggs and the other got baking powder. Also years ago our elders would bake some of their puddings and steam the duffs, and I have a recipe on here as well for microwave style blueberry duff and its equally as delicious. kzbin.info/www/bejne/oGK5la1-Z61jjpY But of course this is the new way of cooking not years ago, I guess it just saves time. This is very like our sponge puddings in Britain, looks great with the blueberries. I was taught to put a cloth or foil over the top of the pudding pot to stop condensation from the lid dripping on the pudding and making it too soggy.

Hi all! I did not have a cotton bag, or a heat appropriate plastic bowl SO, I used a Muffin tray. Directions are as follows: I had my water boiling. Filled the muffin tray's up halfway with batter. Placed a small dish upside down on the bottom of the boiling pot of water to act as a shelf for my muffin tin. Place the muffin tin on the upsidedown dish. Cover and leave for 25 minutes. I doubled the recipe and made 15 small puddings. I love this recipe! We will be adding this to our annual Christmas tradition

I'm not sure about in hot water for one hour. Hi, I am from the Caribbean an not at all familiar with Newfound land Cuisine . I was looking to see how other people make their Black Cake and came across yours. This cake is known as Black Cake, Fruit Cake, Great Cake, made with Rum, Or Rum and Wine, Those who do not want use Guineas or any other Stout but the idea is the same. Black Cake is a must have on Caribbean tables at Christmas.

Hi Bonita, First of all I love your name, :) and I agree that rum fruit cake reminds me of Christmas too, because it was the only time we would have this cake would be at Christmas time and Weddings. I've only made my dark cakes with rum, but I know many great bakers that use grape juice and i've tasted it and it was lovely. Hi Debbie: I used evaporate milk, no name or carnation milk, it's the same as half and half, If you make the pudding in that kind of bowl you need to put it into a boiler separate from your boiled meal, Jiggs dinner. This type of steamed pudding takes up a lot of room in your boiler, but you can use a cotton pudding bag it will need a little less room. My ex boyfriend's mom was Newfie and would make the best JIgg's Dinner. The best part was the apple pudding. Man im thinking about getting back together just for her cooking and baking skills. 😂

Hi Bonita. Can the pudding be put in ramekins surrounded by water in a baking pan, and the piut in the oven? If so, what temp and for how long. I am so glad I found your channel. Thanks!!!

Hi Suzanne: I'm not to sure of your question, if you started it in your pot with you boiled dinner or in water by its self you will have to continue cooking it that way. But if you didn't you can bake it in your oven for about 45 min or until golden brown, poke a knife into your pudding to double check, I hope this helps you. I'm glad to help and I do have a microwave duff there as well, but if you got a pudding tin with lid. When I made this video I didn't have a pudding tin but I made do with the bowl I had. 1959bigjohn hi and thank you for your message, yes, you can use a metal bowl and follow the same recipe, keep the top of your bowl out of the water and have a lid for your boiler. You can even use a metal tin like a tomato can just remove all the paper and clean it, be careful there is no sharpe pieces at the top. I hope this helps you, have a wonderful weekend. Bonita

Hi, I was wondering if, instead of using a bag, could the pudding be put in individual dishes, then placed in a shallow baking pan half filled with water, and then done in the oven

Hi Suzanne, I've never done it before but if you feel comfortable doing this you can, but i just done a baked partridgeberry pudding a couple of days ago. The steps to that one was in a deep ceramic pot with a lid, bake for half hour cover to steam and half hour uncovered. But if you like you can keep the cover on all the way through for one hour then poke your knife or pick in there to check to see if its baked. Hi Bonita! Do you make raisin Duff? My grandma used to make “pudding in a bag”. But it seems like it was a duff. She was from Marystown.

Hi Joan, thank you for your message and for stopping by, sorry its taken me a full year to answer your question, I just seen your message. I haven't got a recipe on here for raisin duff but you can replace the blueberries for raisins and it will tasty amazing. If you use a pudding cotton bag, after you prepared the bag by rinsing water to wet it squeeze out the water and add the batter for the duff, the leave about two fingers of space in the bag for the duff to grow. Then tie the tread on the bag leaving some extra to tie the bag to your boiler. This helps the bag stay a float and only a little in the cooking liquid. The duff needs to steam not boil. I hope this helps and please follow up after you make it. :) Bonita

haha I guess if you enjoy a big slice of pudding, we only make this size when we cook for 4 to 6 people. But my mom she always loves to have a second piece, enjoy and have a lovely day. :) Bonita

Ive never heard of a plastic bowl that is made to tolerate that heat without leaching something unwanted. What brand of plastic bowl r u using? Could a stainless steel bowel be used instead.

Yes you are very right and it would be best to use a stainless steel bowl or pudding bowl. I only put it at the top of my boiler to steam but sense this video I have finally found a few years ago a pudding tin and it works prefect. Hi and thank you for your message, sorry about that. I put a small foil pie pan, the one you would use for making pot pies or mini apple pies. I must have forgot to show that method, sometimes that do happen. :) It works lovely when you steam your pudding or duff having sometime at the bottom of the bowl so it don't burn to the boiler. Plus you only got a small amount of water in the boiler to steam the pudding I always say boil but really its steam. Thanks again and have a lovely day. Bonita
