Salted pie recipe with Turkish cheese or borek, but my version.
Ingredient:
• A pack of 400 g of phyllo dough
• 400 g salted cheese (something like feta)
• 400 g sweet farm cheese (like curdled cheese)
• 400 g sour cream 25% fat
• 4 eggs
• Optional 50-100 ml milk
• 125 g melted butter 82% fat
• And an egg yolk
Preheat the oven to 180 degrees Celsius (356 F), heat up and down, without fan.
Prepare a 33 x 23 cm tray, which we grease with melted butter.
In a large bowl, grate the salted cheese.
On top add sweet cottage cheese. It can be fatter or weaker, it doesn't matter much. You will not notice a big difference in the finished product. On top add the sour cream and the 4 eggs. We mixed everything well. We need to get a fairly liquid composition. If there is not enough liquid, dilute it with a little milk (50-100 ml).
We open the package of pie sheets and put half of them in the tray, wrinkling them like an accordion. Drizzle half the amount of butter, then put half of the cheese composition. We take care to distribute it evenly, even to insist a little more on the edges. It tends to gather in the middle.
We repeat the procedure. Put the rest of the wrinkled sheets in the tray, this time keeping a sheet for the face, sprinkle with butter, and distribute the rest of the cheese.
On top we put the sheet we retained and grease it with melted butter (if there is any left) and a little beaten egg yolk with a fork.
Place in the preheated oven for about 60 minutes. Remember, baking times are never nailed down. Ovens are very different from each other and in your oven can take more or less an idea.
After it cools down a bit, it can be cut into pieces and consumed.
