Hey Phil, this is Nathan in Lake City, SC again. I was wondering if you’ve ever thought about doing barbecue pork in your Weber Smokey Mountain using only pecan or oak red coals from a fire that you have burning in your yard. Technically it should produce a closer taste to Scott’s BBQ. What are your thoughts on that. Love your videos by the way. You do the Pee Dee justice!

nathan hendricks I did that several times. After cutting up the pork butt I make mention of it and compare all wood vs charcoal and wood chunks. Alright Nathan. You made my day. A local guy who knows what I'm tryin to say and has tasted some of the best. To answer your question about using oak or pecan. I've done just that many times, just only one video on it way back after I first began. (check in my older cooks at OFFSET SMOKER PULL PORK SC STYLE REDO). That is what got me started in this channel. Couple Christmas's back, I went outside and built a fire in my firepit using oak & pecan (I have some pecan trees) and shoveled those red hot coals under two butts which I had going in an old Brinkman smoker. Haha, you know you are probably right. We learn from each other and copy each other, but if we try to be somebody we aren't, that's when we can bomb out. I have never seen anyone wrap a stalled pork butt. I think that is brilliant. I have never salted/peppered like you did there. I have not seen those sauces, but see them in your description. I do make a vinegar/mustard sauce with quite a bit of sugar. I also make other sauces. I like them all. Wish I could actually try the sauce you made. You taught me something here, thank you Phil!

Hello Tom, yea that storm surprised me for sure. I managed to roll the WSM up under that large umbrella which is enough. I've cooked under it many times during bad weather. Richard's is great sauce. I buy it from the local Piggly Wiggly gro store. They don't have an online account to order, but the bottle has a phone number. If you call it, he will send you some. HMB got a hold of some that way. I'll go back and add that number and info.

So how long did those butts take? Gonna cook one this weekend at my friends house but don’t want to get up super early and disturb them when they sleep.. I’m looking to start around 7am instead of my normal 3am.. also would it work if I used coal but in a fire pit just fire up logs all day and add wood coals to it? Maybe that will add more of that “authentic flavor”? I’m from Vermont so we don’t have real bbq so idk what it taste like haha

Texas 2.5 You know I really appreciate your comment. I expected more of this type response. Try it sometime. It can be a way to change it up sometimes for something different. The real authentic process is to shovel and use red hot oak or hickory coals under the meat which sits about 23 inches above. A totally different flavor experience. Then season after turning the hog or butts after it's done. This is whole hog cooking in S.C. Thanks for checking it out.

Phil N Florence My dad has told me about Southern pig pickins, but I've never experienced a real one. Closest thing I've had is the pig buried underground with hot coals. I'm hoping to do a small pig on my LSG at some point though. I'll have to keep your seasoning and sauce in mind!

Hey good buddy, yea I like all types of Q for sure. Being raised on this style I like it the most. If you ever put Scott's BBQ in your mouth, your tongue will slap your brain. He is about an hour away from here out in the country in a little block building. They do BBQ right whole hog but using this style. Go look up on YT Scotts BBQ. It is dynomite (IMO) What I did using charcoal with a few wood chunks was pretty good, but the flavor profile using only red coals from a all wood fire sprinkled under the meat is on another level. I'm not talking offset all wood either. It's all good as they say, but there are differences in end results and flavor profiles of each. You know what I'm talkin about. I may end up making me a whole hog pit in the back somewhere and do it right. Thanks Ken. keep it smokin.

Hey Doug. It's great that way in this video. I recently pulled off a pit style cook on 3 butts shoveling in red hot oak coals. It tasted just like the flavor of the whole hog pit cooks. Check out Thanksgiving cooks.

Hey Jay. I wish you could've been here too. That storm really did creep up on me. I had my head down tending to stuff. By the time I came out from under that umbrella to check on the meat, I looked up and saw the heavy clouds. It had been bright and sunny up until then. Then BOOM SHAKALAKA !! LOL I just went with it. If the table hadn't been pulled over so close I cold have positioned myself better, but the blowing rain got my back soaked. You know what that feels like when that water soaks yer drawers. Not good. lol As you noticed, I used the Eat Barbecue Rub. It was very good. While I was cuttin up the meat, Toby was whining to Janet to let him in. He had enough of the heat. He is soft and spoiled rotten. Thanks good buddy-Phil

Great color on those ! Holy cow it was a down pour with a little flood ! That bone coming out at the end was beautiful! I don't know which method of pulled pork I prefer because I have never had a taste test between the two. I definitely often think that plain pulled pork lacks some flavor and I am a sauce person so I bet I would like this version...but I can tell it is either a love it or hate it method :) looks so delicious and you can have pulled pork whenever you want now ! Yummy :)

Haha, you called it right Milan. You are a wise man. That was some good tasting Que. Freezing it is good and keeps good. As you know, never reheat in the microwave. It cooks the meat more, and changes the flavor profile. Always use the oven, toaster oven, or fry pan on stovetop on low heat. Same with a good charcoal steak left over. Thanks-Phil

Another masterpiece Phil! The rain was really pouring down on ya. Say, I noticed you cooking on the lower grate. You did say you were not using the water pan to try to go for a different flavor profile. I beleive fo get closer to a pit barrel cooker type flavor of cooking directly over the coals. Could you taste a noticable different flavor profile by cooking this way? And also by cooking your meat on the bottom grate did that help get more of that flavor? I've always cooked on my top grate and I'm trying to figure out why is all.

Hey Rusty, actually I was on that grilling tab grate level (my ultimate mod) 5 inches down from the top grate. I did not use a water pan. It does give the meat better flavor on any type of meat cook to do that. You can control the temp better with the water pan (more constant set it forget it) but you will not get the fat drippins on the charcoal or wood and the vapors coming back up into the meat (as much). So, I am a believer in this. You may have temps go up and down esp during the opening of the lid, but if left alone they will in time readjust. Actually, unless you use the water pan, I don't recommend pouring the chimney of hot coals on all the charcoal in the basket. This works nice with the water pan and you can control it, but without the water pan it gets the temps too high (unless you want hot n fast) I've learned to use the minion method when not using the water pan so your temps will stay down, and you get the benefit of the open pit flavors you are looking for. You can do it either way, it just takes practice and knowing what flavor profile you want, and if you want to stay closer to the pit. It's all in what you want it to do.

Richards can be ordered off their Facebook, but Prossers do not ship. The lady said someone may be able to order theirs through US Foods, but the shipping and mark ups prolly wouldn't be worth it. They are missing a big market from online orders IMO.

Hey Dave. The storm came without me knowing we were going to have one. I had my head down working. When I came out from under the umbrella to tend to the meat I saw it heavy clouds. When I uttered we might have a shower it began to drizzle, then in 30 seconds it opened up. I had to move fast. lol I gonna look into some type of canopy cover that will work better. I've been under that big umbrella many a time over the years. (3rd or 4th one) It won't blow over due to the heavy 40 lb cast iron stand it sits in. not in the table. Your ribs turned out nice on the rib candy cook. I'll get something done this coming week. Glad you are getting straight on the lid hinge. I could tell something was off. Those trays of pork where making me very hungry, they looked like they were cooked to perfection. I don't understand why people wrap shoulders, other than it cooks faster. i leave mine unwrapped through the stalls and the bark is perfect. Don't like soggy bark. 3-2-1 on ribs ok but not a shoulder

Point ☝️ Bigger Butts 😁 If Im not seeing things you selected Hybrid grate, just perfect for cooking butts without your waterpan, smoken fat increases flavor. I was waiting for you to break out and start singing and dancing with your best Gene Kelley rendition of singing in the rain. With your trademark smile you smoked on. Product was great. What can you get butts on sale for there, they had them here for 1.00 a pound on sale at pigley wigley. The sam's butts looked fresher, the smaller one was similar color as these at the pig. The rain back round music in back round was very appapro with major down pour coming. Great thought and editing skills go into making good video. The wsm got a way, still looking. The price was right, I dont think I would use it enough at present due to volume factor. I fiqure once I get more familar with kettle and slow and sear Ill know when its time for the next move.
