❗️Attention, I recommend using ingredients in grams as this is a more accurate and correct recipe! * Cup = 200 ml
Ingredients
🍦 Cream:
4 egg yolks
60 g (2 1/2 tbsp / 2 oz) condensed milk
30 g (2 1/2 tbsp /1 oz) cornstarch
1 tsp vanilla
320 ml (1 1/2 cup / 11 oz) milk
Cook, stirring constantly, until the mixture has thickened.
20 g (1 tbsp / 0.7 oz) butter
Let the cream cool slightly
🍰 Biscuit:
4 egg yolks
A pinch of salt.
60 g (4 tbsp / 2 oz) sugar
A pinch of salt
60 g (3 tbsp / fl 2 oz) vegetable oil
60 ml (3 tbsp / 2 fl oz) milk
100 g (3/4 cup / 4 oz) flour
5g (1 tsp) baking powder
4 egg whites
a pinch of salt
Gradually add 60 g (4 tbsp / 2 oz) sugar
Beat until stiff peaks form
Add beaten egg whites to the batter mixture
Baking pan 22x27 cm / 8x10 inches
Bake in a preheated oven at 170°C / 330°F for 20 minutes.
Let cool down.
🍫🍫Ganache:
120 g (4 oz) dark chocolate
120 g (1/2 cup / 4 oz) fat cream (30%)
Make a steam bath to melt the chocolate
Stir until everything is smooth
Assemble the cake like in the video
Let the cake rest in the refrigerator for at least 4 hours
