Honestly, with box cake it probably doesn't matter, but my mom really drilled this into me so I do it with everything too. I'm sure that you being an actual Baker had it really drilled into you too. My mom took a bunch of chemistry and food sciences courses in college, so she probably does know. She can actually make her own baking recipes, which is hella impressive tbh. The recipe she created for peanut butter cookies, are the best ones I've ever eaten my entire life, I'm literally spoiled for any other peanut butter cookie they all taste like garbage in comparison

I have a banana cake recipe where you add 2/3 of the dry ingredients to the creamed sugar and butter then combine, then add the eggs, macerated bananas, milk, vanilla, and mix, then add the remaining 1/3 dry ingredients and 1 tsp of baking soda. Very moist and has the lightest texture of any cake I've eaten. It's very similar to my favorite pie crust recipe. All I can figure is by encapsulating the flour with the fat it keeps the gluten from becoming tough.

I work as a prep baker and can confirm this works and is used by A lot of bakeries. Half butter half oil will give you the buttery flavor but keep the cake moist. Instead of an extra egg you can add a scoop of sour cream! You can also flavor the milk with coffee, tea or jam to add flavor the cake. Two tbsp of Jello mix also does a great job adding flavor to cakes!

I've been doing this method for a while. It comes out so much more flavorful and moist. I find water and oil don't make cakes turn out very good in terms of flavor and texture. Adding extra eggs is great. I recommend this for pancakes as well. Adding melted butter, extra eggs and milk to pancakes is a game changer for amazingly fluffy, buttery pancakes (or waffles).

There was a big scandal here in Dallas some years ago over two guys that were making custom cakes and charging exorbitant prices. They quit paying their bills and skipped town. When the police raided their kitchen they found hundreds of opened Duncan Hines cake mix boxes. And as a professional Chef I will say that DH makes a darn good box cake mix.

I like to use a liquid that is similar to what the cake flavor is. For a chocolate cake I might use chocolate milk, or coffee. For a fruit flavored cake I'd use a corresponding juice or nectar. It doesn't mess up the cake and it really adds a great punch of flavor.

Espresso coffee or strong coffee is a good substitute for the liquid in chocolate cake. It deepens the chocolate flavor. I like the buttermilk idea too.

I agree with very few exceptions. I think scratch German Chocolate, Carrot and Coconut cake are undefeated but literally everything else is better box. Esp yellow cake! Nothing worse than a scratch yellow cake. 😢

I worked in a bakery and we would get cake mixes by the 25 pound bag to 50 pound bags depending on who was distributing the cake mix… and my job was to mix the batter and the decorator/Baker would be pouring the batter on full sheet pans. That way it was easier for him to make sheet cakes, round cakes… So I’m tired of people turning their nose up to box cake mix… There’s so much that you can do to make a cake mix taste like homemade… They make great cookies.

Fluffy cupcake tip!! I make my own cupcakes, as I can do them better than the local bakeries. The biggest tip I give to my friends who ask is never over mix the batter. Mix until 95% of the lumps are gone. What’s left are the lumps so small that they will absorb the moisture in the batter and you’ll never know they were there. My cupcakes turn out SO FLUFFY and aren’t dense or dry like the bakeries.

I can see doing that. I read when you bake using baking powder, once mixed into other ingredients, you need to pop it in the oven immediately because baking powder activates very quickly and doesn't last long. Good tip!

I baked and sold cakes for years. I NEVER followed the directions on the box if I wanted a perfect cake. Pudding (not instant) was one of the staple ingredients- along with a few others. I had many repeat customers because the cakes always turned out “perfect”. When decorating, I made my own buttercream icing because I was able to get the texture and control the sweetness factor. When I showed people how I baked my cakes, they were surprised at how simple it was to get the results - consistently vs the cross your fingers and hope. I used to make good money because I also never overcharged for my cakes. I loved what I was doing and would charge mostly to cover what it cost me. I do miss being so busy, but life changes……… just

I used to be a baker..........and yes, we used "boxed" mix which actually came in a big bag. For single cakes like this, I use 2 eggs and 3/4 of the liquid it calls for, and a little bit of oil and butter mix. This makes a much firmer cake, especially if you want to sculpt or stack.

I’ve been doing cakes like this for years. Also with the complete pancake mix I use milk instead of water like the box calls for. Mix until all dry is incorporated but don’t over mix, a few small lumps is fine they will go away as the pancakes cook but once mixed let batter set for 2 minutes and your pancakes come out so fluffy when cooked. 🥰

I worked at a fine dining place where we made everything "from scratch." Except or the little cakes we made. We had plenty of home-made desserts. But we also had these little chocolate cakes that came from a box. But that's not the weird part. The boxes had normal baking instructions on them, to add things like eggs, milk, butter etc. But we just threw a couple cups of mayonnaise in the mix, with some water. And that was it. It blew my mind to pieces. I still can't figure out why those things were so damn good, or who figured out it would work to prep it that way. Like they came out extremely moist. It's insane. Yeah, the mayonnaise has oil and egg in it, but it completely forgoes the dairy. WHY DOES IT WORK? I've never been brave enough to attempt a cake with mix, mayonnaise, and water in my own home, but i might have to experiment. It has always been a culinary mystery to me.

I’ve noticed that nobody ever breaks their eggs in a separate container. My mother taught me to do that in case any eggshell gets mixed in.

You can do a similar thing with brownie mix to make AWESOME brownies. I like to melt and brown the butter abit to give them a little extra richness. Gotta try it with cake mix now.

Some mothers in the 1970’s were doing this method. My mother was and I have continued to make box cakes the same way. Plus, would add just a little baking power sometimes and flavorings!! Worked perfect all the time. I was selling cakes in the ‘70’s before I was a teenager. Now, I’m 64! Thanks for the memories!! ❤😊

I've used half SOUR CREAM and the other half milk or half and half to replace the water. Also the melted butter. This was by accident because I didn't have oil. And I've used APPLE SAUCE to replace oil in my box brownie recipes.

So I creamed the butter, added the other wet ingredients, scraped it down, and then mixed for 5 minutes. Then added the dry mix, mixed for a few minutes, scraped it down, and mixed for a very exact time... like 6.3 minutes. But the real star was flavored simple syrup. Bake, cook, cool, pull, flash freeze, cut, wrap. Then when you pull it for decoration you drizzle drizzle between every layer.

I’ll try the butter just for fun, but for my chocolate decadent cake I’ve always used real extra virgin olive oil and it’s so moist and rich- and no you can’t taste the olive oil and it’s always stayed super moist during the 5-7 days. Never dries out.

True! And my 5 years old feels like a chef when cracking the eggs and putting milk and butter. We also do the cream with whipping cream and add sugar, color, fruits, and sprinkles. Best cupcakes ever!

I have always used butter and milk instead of oil and water. I also use a packet of pudding mix. Too many of my family members have tried my cakes and now I am the family baker. I always make some sort of homemade icing depending on the cake flavor! Nobody orders a cake from a bakery; I AM the bakery!😂

I did exactly this as a night baker we did 6 eggs 1.5 cbutter if i remember correctly and 1.5 c self rising flour, i usually made about 75 to 80 cakes in 4-5 hours, I had 6 ovens :P

I always heard you add jello pudding mix, and then when you frost the cake use only 1/2 the can of frosting and cut in cool whip instead of the other half.

That is true! I took a professional decorating class and the bakery used jazzed up mixes. Makes a huge difference. Also butter is much healthier than canola or vegetable oil. 😊

Avocado oil is a good substitute for vegetable oil, and is pretty much flavorless. It’s healthier for cooking at high temps too. But butter is the best. 😋

I’ve always doctored up cake mixes but these companies reduced the size of their mixes and still charging more for less products. Which results in flat azz cakes! Ridiculous! So now I have to buy two and use 1 1/2 just to get a decent size cake round!!

I do this all the time. Absolutely true, bakery quality. For chocolate cakes stir in 2 cups of chocolate chips, too for real decadence.

I do the same with box cakes, but I would suggest you whip the ingredients a lot better. Wet ingredients first using a mixer if you have one, then add the dry. Put more air in.

My daughter and I used this exact cake mix yesterday. We did strawberry applesauce instead of the oil, heavy whipping cream instead of water, and added a generous squeeze of strawberry syrup. Delicious.

I use mayo instead of oil. The cake comes out moist and delicious. Everything else the same. IMO it's even better with mayo. We have a cake place in Canada that uses mayo. Everyone wants their cake from this place.

Perfectly said and shown! Couldn't agree more, another hack I've used for 20 years is adding a tbsp or 2 of icing to the mix if you don't have enough butter
